SKILLET CHICKEN LASAGNA

Steps:
- Cook the pasta according to the package instructions; drain and set aside.
- Heat the oil in a large skillet over medium-high heat. Season the chicken with the Italian seasoning and some salt. Add the chicken to the skillet and cook until golden brown, 2 to 3 minutes per side. Remove the chicken to a plate and set aside.
- Add the onions and garlic to the same skillet and cook, stirring, for 3 minutes. Add the broth, then scrape the bottom of the skillet to loosen the bits. Cook for another 2 to 3 minutes to let the broth reduce. Add the marinara sauce and red pepper flakes, bring to a simmer and simmer for 10 minutes.
- Turn off the heat and add the drained pasta, mozzarella, ricotta, Parmesan and basil. Add the cooked chicken on top. Toss to combine, then add more of the mozzarella, ricotta, Parmesan or basil until the sauce is just how you like it. Serve with a sprinkling of Parmesan and a little basil on top.

- Preheat the oven to 350 degrees F.
- In a large bowl, combine the spinach, chicken, Cheddar, onion, cornstarch, salt, pepper, soy sauce, soup, sour cream, mushrooms and mayonnaise. Put a layer of noodles in the bottom of a greased 9-by-13-by-2-inch casserole dish. Spread half of the spinach mixture over the noodles. Put another layer of noodles over the mixture and cover with the remaining spinach mixture. Sprinkle the Parmesan over the casserole. Then sprinkle the pecans on top. Bake for 1 hour. Let the casserole sit for 15 minutes before serving.
FOUR CHEESE-CHICKEN LASAGNA

- Make the sauce: Heat the olive oil in a large skillet over medium heat; add the chicken and cook until browned, turning, 5 minutes. Add the onion, garlic and tomato paste and cook, stirring, until the onion softens, about 5 minutes. Add the wine and cook until mostly evaporated, about 5 minutes. Stir in 3 cups water, the tomatoes, bay leaves, parsley, 1 teaspoon salt and 1/4 teaspoon pepper; bring to a boil. Reduce the heat to medium low and simmer 50 minutes. Break up the chicken with a spoon. Cook until thickened, 20 more minutes. Remove the bay leaves.
- Prepare the lasagna: Preheat the oven to 350 degrees F. Bring a large pot of salted water to a boil. Add the noodles and cook as the label directs. Drain the noodles and drizzle with olive oil; set aside.
- Meanwhile, place the kale in a large microwave-safe bowl; add 1/2 cup water and a pinch of salt. Cover with plastic wrap and microwave until tender, 5 minutes. Drain and rinse under cold water; squeeze dry, then return to the bowl. Stir in the eggs, ricotta, half of the parmesan and the parsley. Add 1/2 teaspoon salt and a few grinds of pepper. Toss the mozzarella, asiago and the remaining parmesan in a separate bowl.
- Spread 3/4 cup of the sauce in a 9-by-13-inch baking dish. Top with one-third of the noodles, overlapping them slightly. Cover with half of the kale mixture, then 2 more cups sauce. Sprinkle with one-third of the mozzarella mixture. Repeat the layers (noodles, kale mixture, sauce, mozzarella mixture). Top with a final layer of noodles, the remaining sauce and the remaining mozzarella mixture. Set on a baking sheet.
- Loosely cover with foil and bake 40 minutes, then uncover and bake until golden and bubbly, about 25 more minutes. Let stand 30 minutes before serving.

- Preheat oven to 375 degrees F (190 degrees C).
- Bring a large pot of lightly salted water to a boil. Add lasagna noodles and cook for 8 to 10 minutes or until al dente; drain.
- In a skillet, brown ground beef. Using a fork, mix cottage cheese, eggs, garlic powder, parsley, salt and pepper. In a separate bowl combine tomato paste and tomato sauce.
- In a 9x13 inch baking pan, layer noodles, ground beef, tomato sauce mixture and cottage cheese mixture. Two layers of each will fit. Cover with tin foil and bake for 30 minutes. Remove tin foil the last 8 minutes of baking time.

- In a saucepan, saute onion and green pepper in butter until tender. Add mushrooms; cook until tender. Remove from the heat; stir in soup, milk, pimientos and basil. In a bowl, combine the chicken, American cheese, cottage cheese and 1/4 cup Parmesan cheese., Spread a fourth of the mushroom sauce in a 13x9-in. baking dish coated with cooking spray. - Melt butter in large skillet on medium low. In a small bowl combine flour, salt, and basil. Once butter has melted, stir in flour mixture then add chicken broth. Stir frequently until thicken and comes to a slow boil. Remove from heat and add chicken.
- Mix cottage cheese, mozzarella cheese and egg together.
- Place 1/3 of the chicken mixture in a greased 9x13 baking dish. Top with half the noodles and half the cheese mixture. Repeat layers ending with the last third of the chicken mixture. Top with parmesan cheese.
- Bake at 375°F for 45 minutes.

- Cook lasagna noodles. Drain and rinse in cold water. Lay flat on paper towels.
- Saute mushrooms in 2 tablespoons butter and 1 tablespoon olive oil until golden.
- Lower heat and add garlic and parsley for a couple more minutes. Do not brown.
- In a separate pan, melt 4 tablespoons butter.
- Add flour and stir until combined.
- Add milk and chicken stock bit by bit until incorporated. Cook until thickened - do not boil.
- Add salt and pepper.
- Pour half and half in bottom on 10x12 baking pan.
- Layer with noodles, mushroom mixture, chicken and Prosiutto and 1/3 each of ricotta mozzarella and Parmesan.
- Cover with 1/3 white sauce.
- Repeat layers then sprinkle with Parmesan.
- Bake uncover at 350 for about 40 minutes.
- Rest for 10 minutes before serving.

CHICKEN LASAGNA
I had search online for a recipe for chicken lasagna that used a white sauce instead of the traditional marinara sauce. I could not find what I wanted, so I winged it!!!! It was a great success and this recipe is easily adjusted to dinner for 1,2,3, or more... this recipe was for 3, in an 8 x 8 baking dish.

- Prepare lasagna noodles as directed by package.
- Preheat over to 350°F.
- Take chicken breast and cut them length wise to strips.
- Heat oil in skillet to medium temperature.
- Add chicken pieces.
- Sprinkle with salt and pepper.
- Cook until no longer pink, but do not over cook. Break up chicken into pieces. Set aside.
- In a saucepan over low heat, empty can of cream of mushroom, add heavy whipping cream and whisk in all other ingredients.
- Taste is your preference.
- Remove once thickened.
- Now just layer. Start with some sauce on the bottom of baking dish.
- Next layer noodles, more sauce, chicken, and mozzarella cheese.
- Repeat layers, making sure your top layer is noodles, sauce and mozzarella cheese.
- Cover tightly with foil and bake for 30 minutes.
- Uncover and bake an additional 15 minutes.
- Place 4 inches under broiler, and broil about 2 mins until cheese is bubbling and has a golden crust forming.
- Remove and let set about 5-10 minutes before serving.

- In a large bowl, mix together cream of mushroom soup, cream of chicken soup, chopped onions, cottage cheese, sour cream, poultry seasoning, oregano, basil, grated Parmesan cheese, and chicken. If desired, add olives.

- Saute mushrooms and onion until soft.
- Spread a small amount of hollandaise sauce on bottom of 9x13 pan.
- Place a layer of noodles on top cover with 1/2 cooked chicken and sprinkle with salt and pepper.
- Top with 1/2 mushoroom and onion mixture then 1/2 remaining hollandaise sauce.
- Sprinkle with 1/2 basil and oregano top with 1/2 mozzarella and parmesan.
- Place all of the asparagus tips neatly in a layer.
- Dont use fresh or frozen asparagus.
- Repeat step 3, 4, 5 ending with cheese.
- Cook uncovered at 350 for 35 minutes.
- Let stand for 10 minutes.
- If using a favorite hollandaise sauce and not a pakaged product you can use 1 1/2 cup.
