Steps:

  • Mix chicken, cream cheese, 1/2 cup salsa and bacon; spread over tortillas. Roll up tightly; wrap in plastic. Refrigerate at least 1 hour. Just before serving, unwrap and cut tortillas into 1-in. slices. Serve with remaining salsa.

Broccoli Cheddar Chicken Rollups Recipe by Tasty image

Steps:

  • In a small bowl, microwave 1½ cups (225 g) of broccoli for 1 minute. Add the cheddar cheese, garlic powder, onion powder, and cream cheese. Mix thoroughly, and set aside until ready to use.
  • On a cutting board, butterfly the chicken breasts with a knife. Cut through the chicken breast so you have 6 thinner chicken cutlets. Cover in plastic wrap, and tenderize by beating with a rolling pin or a heavy pan.
  • Remove the plastic wrap, and season with salt and pepper. Place a scoop of the broccoli cheddar mixture on top of a chicken cutlet, and spread until the chicken is covered.
  • Roll the chicken up starting from the tapered end. Use 2 toothpicks to keep the chicken tightly rolled. Repeat with the rest of the chicken.
  • Preheat the oven to 325˚F (165˚C). Line a baking sheet with parchment paper.
  • In a plastic bag, crush the cheddar crackers until they have a coarse, sand-like texture. Pour the cracker crumbs into a large bowl. Add the rest of the minced broccoli. Stir to combine.
  • Put the flour into a medium bowl.
  • Whisk the eggs in another medium bowl.
  • Using tongs, place one of the pieces of chicken into the flour. Turn the chicken in the flour until it is fully coated, tap off any excess flour. Place the chicken in the egg, turn until the chicken is coated. Place the chicken in the broccoli cracker crumb mixture, turn until the chicken is fully coated. Repeat with the remaining chicken rolls.
  • Transfer the pieces of chicken to the prepared baking sheet. Bake for 40-45 minutes.
  • Let the chicken cool slightly, then remove the toothpicks.
  • Enjoy!

My DH and his friends devoured them so I'm sure they'll be requested again! Also, I used low-fat cream cheese and ranch dressing and no one knew! Oh, and feel free to add in other things like diced black olives, green onions, etc.

Steps:

  • Finely chop chicken (I used my food processor, but you can do it by hand.).
  • Mix together cream cheese (should be softened), salsa, ranch, garlic powder. (I also used my food processor to get a smooth consistency.).
  • Fold chicken into cream cheese mixture.
  • Spread mixture pretty thin onto tortillas, leaving 1" of the edge uncovered.
  • Sprinkle your favorite cheese on top.
  • Roll up and wrap individually in plastic wrap.
  • I let mine chill for a couple of hours & sliced with a serated edge knife before serving.

Steps:

  • In a medium bowl, mix together the cream cheese, salsa and onions until fully combined. Spread the tortillas with the mixture, leaving a 1/2-inch edge. Top each with bacon and ham, then roll into tight cylinders and wrap in plastic wrap. Refrigerate for at least one hour. Remove from fridge, discard the plastic wrap and cut each roll into 1-inch pieces, discarding the uneven ends (or eating them while preparing, like I did!). Each roll should yield eight pieces. If you like, before cutting, stick toothpicks in the rolls at 1-inch intervals; it makes serving a snap.

Steps:

  • 1. In a bowl, combine chicken, 1/2 cup sour cream, half of the soup, 1-1/2 teaspoons taco seasoning, 1 cup of cheese, onion, salsa and olives.
  • 2. Spoon 1/3 cup onto each tortilla. Roll up and place seam side down in a greased 13"x9"2" baking dish.

  • Cook bacon in medium skillet on medium heat 10 min. or until crisp, stirring occasionally. Use slotted spoon to transfer bacon to paper towels to drain. Discard all but 1 tsp. drippings from skillet.

  • Preheat oven to 425°. Flatten chicken to 1/4-in. thickness. Place a slice of ham and half slice of provolone cheese on each piece of chicken. Roll up from a short side and tuck in ends; secure with a toothpick. , In a shallow bowl, combine crumbs, Romano cheese and parsley. Pour milk into another bowl. I had a lady in my church who made this for an activity and they were so good! I asked her for the recipe and they are so easy to make!! I poached my chicken by boiling it for about 10 minutes and they were cooked through. You could also use a left over rotisserie chicken or even canned chicken, although with canned it tends to taste like tuna to me. I also used the Pillsbury Grands biscuits, but found that I would have preferred them smaller, so have listed the regular sized ones here.

Steps:

  • Prepare you chicken and shred it finely. I used a food processor and pulsed it a few times to shred it easily.
  • Add the shredded chicken to a mixing bowl and add the rest of the ingredients and stir well until creamy.
  • Open the can of biscuits and roll out each individual one to flatten them out a bit.
  • Spoon a heaping tablespoon of the chicken creamy mixture to the biscuit dough and fold the dough over the filling. It is ok if some of the filling comes out, as it bakes it will set up.
  • Bake at 400* for about 15 minutes and the biscuits are golden brown.
  • Allow to cool for a few minutes before serving.
  • These could be made up in advance and frozen for a few weeks, and heated in a 350* for about 10 minutes.

  • Remove all of the skin and bones from your chicken. Throw meat into a medium sized saucepan, Add salsa and stir until blended. Place pot on your element over medium to medium high heat for a few minutes, until chicken mixture is hot. Then remove from heat and add 3 tablespoons of the cilantro. Set aside. Do not put pot back on hot element. In a small bowl place sour cream and set aside.
  • Lay out tortillas on a table if possible or take a large plate and divide mixture into 6 piles or as many tortillas that you want or need. Using a spoon dump some of the mixture on top of the tortilla, in the middle. Top with cheese. Pick tortilla up and adjust contents into the shape of a fat cigar. Flip each end up over top of the filling and roll. Place seam side down until you are finished rolling them all up.
  • Place a large skillet over medium to medium high heat. This part can get a bit messy but we believe it is worth it. Place a few pieces of paper towel on a large enough plate to hold all of your tortillas and set aside. Place your salt and pepper shaker nearby. Next, grab each rolled tortilla. Coat with cooking spray and sprinkle with a little salt and pepper. Place, seam side down on your skillet. After a minute or two you have to flip your tortilla to brown the other side. Keep checking that your tortilla is as brown as you want it. Repeat this process until all of your wraps are browned and crisped. Transfer to serving plate and slice in half if desired. Use sour cream mixture as a dip. Serve. Enjoy!
