CHICKEN, SWEET POTATOES & PEANUT BUTTER SOUP (OTHERWISE KNOWN AS AFRICAN CHICKEN-PEANUT SOUP)

This combination sounds weird, but it's so good! My son LOVES it!

Chicken, Sweet Potatoes & Peanut Butter Soup (otherwise known as African Chicken-Peanut Soup) image

Steps:

  • Boil chicken breasts either in plain water or add some poultry seasoning to the water while boiling to give it more flavor. Cook until chicken is not pink and then drain and let the chicken cool. Cut up the chicken into small pieces after it's cooled.
  • Place olive oil in a large pot and your cubed/diced sweet potatoes and cook them in the oil for 3 minutes.
  • Add the onion, red bell pepper, garlic & jalapeño to the sweet potatoes and sauté for 5 minutes.
  • Stir in the chicken, salsa, ground cumin, chicken broth and black beans & bring to a boil.
  • After the mixture has reached a boil, turn down the heat to a simmer. Get your 1/3 cup PB and a little bit of the soup broth & mix it together before dumping the PB into the pot. Then add that into the soup mixture. Let simmer on low for 15 -20 minutes and then serve when your ready!
  • Serve with some warm crusty bread, it's delish!

  • Preheat oven to 375°. Place chicken in a greased 13x9-in. baking dish; sprinkle with salt and pepper. Bake, uncovered, 30 minutes., Meanwhile, in a large skillet, heat oil over medium-high heat. Add sweet potatoes; cook and stir 10-12 minutes or until tender. In a small bowl, mix chutney and peanut butter; stir into sweet potatoes. WEST AFRICAN PEANUT SOUP WITH CHICKEN

This West African soup is about as different from a traditional European chicken-in-a-pot soup as you can get, flavored with ginger, garlic and chiles (sounds Chinese, yes?), and incorporating vegetables like sweet potatoes and kale. Then of course there are the peanuts. When it comes to the peanut butter, "natural" peanut butter, made from peanuts and salt and nothing else, works best. Chunky or creamy? It doesn't matter much. Finally, it's nice to time the cooking so that the sweet potatoes do not quite fall apart.

  • Chop peanuts, or crush them with the side of a knife, or pulse them in a food processor to chop roughly.
  • Put oil in a deep skillet or medium saucepan over medium heat; a minute later, add onion, ginger and garlic and cook, stirring occasionally, until onion is soft, 3 to 5 minutes. Steps:

  • Season chicken with 1/2 teaspoon salt and the black pepper. Heat 1 tablespoon oil in a large pot over medium-high heat. Add half the chicken; cook until no longer pink, 2 to 3 minutes, then transfer to a plate. Repeat with 1 tablespoon oil and remaining chicken.

African Peanut Chicken Soup image

Steps:

  • Heat 1 Tbsp olive oil in a large pot.
  • Add 2-3 chicken breasts, diced; 1 onion,chopped; and 3 cloves of garlic, chopped.
  • Stir and cook 5 minutes or until chicken is done.
  • Peel 2 medium sweet potatoes then either grate, food process, chop, or bake/microwave and mash them.
  • Add the sweet potatoes to the pot along with 1 green bell pepper, chopped; 1 red bell pepper, chopped; 2 cans of chicken broth (or 3 1/2 cups chicken broth made with chicken bullion); 1 1/2 cups V-8 or tomato juice; 1 teaspoons ginger; and 1/2 teaspoons cayenne pepper. Mix well.
  • Bring to a boil. Reduce heat. Cover and simmer 10-15 minutes or until veggies are tender, stirring occasionally.

Steps:

  • Heat olive oil in a skillet over medium heat, and brown the chicken breasts on both sides, about 5 minutes per side. Place the chicken breasts into a slow cooker. Cook the onion, red bell peppers, and garlic in the hot skillet until the onions are translucent, about 5 minutes; transfer the cooked vegetables into the slow cooker.
  • Stir the crushed tomatoes, sweet potatoes, carrots, chicken broth, curry powder, cumin, chili powder, cayenne pepper, red pepper flakes, cinnamon, and black pepper into the slow cooker. African Sweet Potato and Peanut Soup image

Steps:
