OVEN BBQ CHICKEN DRUMSTICKS

A wonderful chicken recipe that can either be nice and gentle, or have a bit of a kick!

Oven BBQ Chicken Drumsticks image

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Place drumsticks in a baking dish.
  • Whisk water, ketchup, vinegar, brown sugar, butter, salt, Worcestershire sauce, mustard, and chili powder together in a bowl; pour mixture over drumsticks. Cover with aluminum foil.
  • Bake in preheated oven until no longer pink at the bone and the juices run clear, about 1 hour, turning chicken about halfway through. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

Chicken Thighs with Homemade Barbeque Sauce image

Steps:

  • For the Barbeque Sauce: In a small sauce pan heat the butter, garlic and onions until the onions soften and the garlic is fragrant. Add all of the remaining ingredients and simmer lightly on a low heat for a minute or two. Remove from the heat and let cool down. You may either leave the sauce chunky or give a few good chops in the food processor. Place in a jar with a lid and refrigerate. For the Chicken thighs: Preheat Oven 350 degrees: Place the thighs in the barbeque sauce; cover and refrigerate for at least one hour. Place the chicken thighs in a baking pan; and cover with a little more barbeque sauce. Bake 45-50 minutes.

- for the barbeque sauce:
- 1 tablespoon butter
- 4 -5 cloves garlic - chopped fine
- 1 small red onion - diced
- ¼ cup jack daniel's single barrel whiskey
- ¼ cup brown sugar
- 1 cup ketchup
- ½ cup water
- 1 tablespoon molasses
- 2 tbs. vinegar
- ½ tsp. salt
- 1 tsp. red pepper flakes
- ¼ tsp. black pepper
- for the chicken thighs:
- 10 bone-in chicken thighs with skin
- homemade barbeque sauce

An easy & simple recipe to tantalise the palate! My mum taught me this one. It's very similar to the one's we've hear before, but it's got some twists. The good thing about this recipe is that it is so versatile: it can be chicken thighs or drumsticks or even pork chops or chicken wings!

Easy Grilled Chicken Thighs in Sweet BBQ Sauce image

Steps:

  • Mix all the ingredients in a bowl and let the chicken marinate for at least 20min.
  • Pre-heat the grill for 2 minutes.
  • Grill the chicken thighs for 12 minutes on each side. Do not turn more than once but make sure you rotate the grill once, so that the chicken browns evenly.

2 chicken thighs
30 ml teriyaki sauce (2 tablespoons)
30 ml soy sauce (2 tablespoons)
45 ml ketchup (3 tablespoons)
1 tablespoon ginger (ground ginger is OK too)
3 tablespoons caster sugar (for a helathier choice use sugar substitute)
