Chicken flavored with the honey-sweetened Scotch-based liqueur Drambuie. Good served with pilaf and asparagus with lemon juice and butter.

Steps:

  • Brown the chicken breasts, seasoned with salt and pepper, in butter in a skillet; remove to a plate with a slotted spoon.
  • Sauté the onion, garlic and parsley in the same pan.
  • Add the tarragon and 2 Tbs Drambuie to the pan and simmer 2 minutes more.
  • Lay each chicken breast on a square of foil.
  • Coat each breast with the Drambuie sauce and sprinkle with thyme.
  • Seal and bake 1 hr at 300°.
  • Remove and open each foil pack.
  • Pour the rest of Drambuie over chicken, reseal the foil and leave to cook another 5 minutes.

Steps:

  • Flour and season the chicken breasts and saute in hot butter in both sides.
  • When they are well browned, sprinkle with Drambuie, add the chicken stock, cover and simmer for ten minutes: remove to platter and keep warm.
  • While the chicken is cooking, peel and core the apples.
  • Cut them into thick slices and cook gently until tender in butter- avoid mashing.
  • Make the sauce by adding a little more Drambuie to the stock left in the pan and gently stir in the cream.
  • Heat just until hot (not boiling).
  • Add the roasted flaked almonds.
  • Cover the chicken with sauce and garnish with the sliced apple.

Steps:

  • In a deep-fryer or heavy-bottomed pot, heat enough canola oil to come halfway up the sides of the pot, to 375 degrees F. Preheat the oven to 375 degrees F.
  • Put the garlic, vinegar, mustard, horseradish and rosemary into a food processor. Pulse the ingredients until smooth. Slowly add the olive oil to emulsify and season with salt and pepper. Put the chicken in a large resealable bag. Pour the marinade into the bag and mix it into the chicken until well coated. Close the bag and refrigerate for 2 to 4 hours and up to overnight.
  • Put the flour in a shallow dish. Remove the chicken from the marinade. Dredge each piece of chicken in the flour, shaking off any excess. Working in batches, fry the chicken until golden brown, about 7 to 8 minutes. Remove the drumsticks from the fryer and arrange them on a sheet tray. Put them in the oven until cooked through, about 6 to 8 minutes. Remove the chicken from the oven and arrange them on a platter for serving.

  • Shake several times for the first 24 hours.
  • After 24 hours, remove lemon zest.
  • Cover and let stand for 2 weeks in a cool, dark place shaking gently every other day.

Steps:

  • Put the chicken breasts between two pieces of baking parchment and bash with a rolling pin until 1cm thick. Cut each into two even pieces.
  • Heat two frying pans over a medium-high heat, heating the oil in one. Fry the chicken in the oiled pan for 3-4 mins on each side until cooked through. Season. Reduce the heat, drizzle in the chilli sauce and half the lemon juice and cook for 1-2 mins more until the sauce is reduced. Remove from the heat.
  • While the chicken cooks, toast the buns in the dry frying pan for 30 secs. Transfer to a plate, then fry the halloumi in the pan (add a bit of oil if the pan is not non-stick) for 30 secs on each side until golden. Toss the cabbage with the mayo and remaining lemon juice.
  • Spoon the hummus (or dip of your choice) into the toasted buns, then top with the rocket, chilli chicken, halloumi and peppers. Drizzle with a little more chilli sauce, spoon over the cabbage, season with black pepper, and top with the bun lids. Serve with any extra cabbage on the side, or a green salad.

Steps:

  • Preheat your oven to 350˚F / 175˚ C
  • Turn the block of halloumi on its side and cut it into three to four even slices. Set aside.
  • Pour the olive oil, salt, and pepper into a large plastic bag. Put the tomatoes and chicken in and massage until everything is evenly coated in the seasoned oil.
  • Dump everything onto a foil lined baking sheet. Top the chicken with the large basil leaves and then the slices of halloumi.
  • Bake for 15 minutes at 350˚, then turn on the broil setting and cook for another 10 minutes or until the cheese is golden brown and the chicken is cooked. (note: oven times vary, especially broil so keep an eye on it!)
  • Take the chicken out and let it rest on a plate and continue to cook the tomatoes for 10 more minutes back on 350˚ F. (They will become super sweet and have a great concentrated tomato flavor!)
  • Meanwhile, add the olive oil, garlic, salt, pepper, and lemon juice to a blender and blitz for 30 seconds. Next add the basil and blitz until it's the consistency of pesto, about 30 seconds.

Steps:

  • Preheat the oven to 180C Wash and clean the chicken. Season well with salt and pepper inside and out.
  • Heat some oil in a saucepan and saute the bacon until slightly browned.
  • Add the onion and celery to the pan and saute for 2-3 minutes.
  • Next add the apple and 1 tbsp of the butter. As soon as the butter has melted, add the chopped giblets, bread, egg, rosemary, salt and pepper. Stir to combine for about a minute.
  • Finish by adding the Drambuie and heat for a few seconds.
