Steps:
- 1. Preheat oven to 350 degrees F. Brush both sides of chicken breast with olive oil. Sprinkle Mrs. Dash® Fiesta Lime Seasoning on both sides.
- 2. Bake chicken for 25 minutes or until chicken is cooked through.
- 3. While chicken is baking, dice the tomato, mango, and red onion. Combine with Mrs. Dash® Fiesta Lime and mix in a large bowl, cover and refrigerate.
- 4. Arrange chicken on serving plates topped with mango salsa.

- Sprinkle chicken with 1/4 teaspoon salt.
- Heat 1 teaspoon oil in a large nonstick skillet over medium-high heat.
- Add the chicken; cook 3 minutes on each side or until done.
- Remove from pan; keep warm.
- Heat 2 teaspoons oil in pan over medium-high heat.
- Add chopped onion and bell pepper; saute 5 minutes, stirring occasionally.
- Add 1/4 teaspoon salt, ginger, curry, coriander, and garlic, and saute 30 seconds.
- Combine broth and cornstarch, and add to pan.
- Bring to a boil, and cook 1 minute, stirring constantly.
- Remove from heat.
- Stir in mango.
- Spoon rice onto each of 4 plates; top with chicken.
- Spoon sauce over chicken; sprinkle with green onions.

- In sauce pot over medium heat put some oil and brown chicken pieces in batches. Do not crowd pot. Transfer chicken to bowl until all is browned. Pour off oil from pot. Now add a little fresh oil and start sauteeing onions. Just as they start to get color, add scallions, ginger, garlic, and curry powder. Stir and continue to saute for a few more minutes. Then, add tomatoes and chicken pieces back to pot. Now, add water or stock. Bring this all to a simmer and cover. In about 35 to 50 minutes, depending on size of chicken pieces, curry will be ready.

- In a large nonstick skillet, heat the oil; add in the chicken and sprinkle with salt and pepper.
- Stir/saute for about 6 minutes or until browned; transfer to a plate.

- In a bowl stir together mayonnaise, sour cream, cilantro, curry powder, and salt and pepper to taste until combined well. Peel mango and thinly slice lengthwise.
- Pat chicken dry and season with salt and pepper. In a 9-inch nonstick skillet heat oil over moderately high heat until hot but not smoking and sauté chicken 4 minutes on each side, or until cooked through. Transfer chicken to a cutting board and let stand 5 minutes. Diagonally slice chicken and season with salt and pepper.

- In a large Dutch oven or heavy pot, heat oil over medium-high. Season chicken with salt and pepper. Working in two batches, brown chicken, 3 to 4 minutes per side. Transfer to a plate.

- Trim chicken of excess fat and sinew.
- Head oil and butter in pan; add chicken fillets.
- Cook over medium heat for 4 minutes on each side or until lightly browned and cooked through.
- Remove from pan, cover with aluminium foil.
