Green Onion Hash Brown Potatoes image

Steps:

  • Scoop cooked potatoes from shells and coarsely chop. Heat a medium nonstick skillet over moderate heat. Add oil and butter to the pan. When butter melts into the oil, add green onions and cook 1 minute. Add potatoes and cook, turning occasionally, until potatoes are crusted and golden and onions begin to brown at edges.

2 or 3 large leftover baked potatoes
1 tablespoon vegetable oil
2 tablespoons butter
5 scallions, finely chopped, whites and greens
Salt and pepper or steak seasoning blend

CHIVE AND ONION HASH BROWNS image

Steps:

  • 1. In a Dutch oven, combine the first five ingredients. Cook and stir over medium heat until well blended. Stir in the potatoes.
  • 2. In a greased 2-qt. baking dish, layer a third of the hash brown mixture and 1/3 cup of the Swiss cheese. Sprinkle with half the chives. Repeat layers. Top with remaining hash brown mixture and cheese; dot with butter.
  • 3. Bake, covered, in a preheated 375-degree oven for 35 minutes. Uncover and bake 10-20 minutes longer or until edges begin to brown and potatoes are heated through. Let stand 10 minutes before serving. Sprinkle with remaining chives.

4 oz spreadable chive and onion cream cheese

Steps:

  • Shred potatoes into a large bowl filled with cold water. Stir until water is cloudy, drain, and cover potatoes again with fresh cold water. Stir again to dissolve excess starch. Drain potatoes well, pat dry with paper towels, and squeeze out any excess moisture.
  • Heat clarified butter in a large non-stick pan over medium heat. Sprinkle shredded potatoes into the hot butter and season with salt, black pepper, cayenne pepper, and paprika.
  • Cook potatoes until a brown crust forms on the bottom, about 5 minutes. Continue to cook and stir until potatoes are browned all over, about 5 more minutes.

  • Pierce the potatoes; place on a microwave-safe plate. Microwave, uncovered, on high for 9-11 minutes or until tender, turning once. Cool slightly; peel and cube., Place potatoes in a bowl; add onion and red pepper if desired. In another bowl, combine the flour, milk, salt and pepper until smooth. Hash Brown Potatoes image

Steps:

  • Add the duck fat to a large, straight-sided pan over medium heat. Add the onions, season with salt, to taste, and saute until the onions are soft, translucent and are very aromatic, about 8 to 10 minutes.
  • Add the potatoes and toss to coat with the duck fat and combine with the onions. Season with salt, to taste. Shake to spread the potatoes into an even layer and press down gently with a spatula to the bottom of the pan. Let the potatoes brown on the bottom, shaking frequently to prevent sticking. Toss the potatoes several more times, press them down again to allow for maximum browning. Don t worry if the potatoes lose their perfect square shape, that s how they roll. When the potatoes are cooked through, about 12 to 15 minutes, taste for seasoning and adjust, if needed (they will). Remove them from the pan to a serving bowl and sprinkle with chopped chives.
  • That s a yummy potato!

Sour Cream and Onion Hash Browns image

Steps:

  • Heat a skillet over medium heat and add the canola oil. Add the onions, season with a pinch of salt and cook, stirring frequently, until the onions are golden brown, 15 to 20 minutes.
  • Meanwhile, season the potatoes with salt and pepper and let sit for 5 minutes. Drain out the excess moisture.
  • Set individual cast-iron pans over medium heat until very hot. Add some olive oil to each pan and a handful of the potatoes. Cook until golden brown and crispy, about 5 minutes. Flip and add more oil if necessary. Cook until golden brown on the second side and cooked through. Repeat with the remaining potatoes.
  • Top each hash brown with some caramelized onions and a dollop of sour cream and chopped scallions.
