CHOCOLATE CRANBERRY COOKIES - MIX IN A JAR
This is posted in response to a request and I have not yet made it. The recipe comes from the "Gifts for the Cookie Jar" cookbook. Times are guesstimates to assemble the jar mix. Substitute a different dried fruit for a different taste.

Steps:
- *JarMix Instructions*.
- In medium bowl, combine flour, sugar, baking powder and salt, stirring to mix well.
- In 1-qt jar, place half of the flour mixture and press down firmly.
- Place cranberries in jar and then cover with chocolate chips.
- Place remaining flour mixture over chocolate chips.
- Place lid on jar.
- *PreparationInstructions*.
- Preheat oven to 375°F.
- Empty contents of jar into large mixing bowl.
- Add vanilla, eggs and oil.
- Beat on low speed until thoroughly blended (dough may be crumbly).
- Shape into 1 1/2-inch balls and roll in sugar.
- Place 3 inches apart on ungreased cookie sheet.
- Bake for 10 minutes, until very lightly browned edges.
- Cool for 1 minute and transfer to cooling rack.

- Preheat oven to 350 f degrees grease cookie sheet and set aside. Place cranberries and orange juice in a microwave safe bowl. Cover with celephane. Microwave until warm, 1-2 minutes.
- In another bowl mix flour and cocoa, baking soda and salt.
- On a large bowl, beat butter and both sugars until mixed. beat in eggs an vanilla. Add flour mixture until just mixed. Stir in chocolate chips and the cranberry mix.
- Drop tablespoonfuls of dough about 1 inch apart on greased cookie sheet. Bake until cookie edges are firm (about 10 minutes.) Cool for 5 minutes on the cookie sheet and then remove to wire rack. Store at room temp for up to 3 days or in the freezer up to 1 month.

- In a small bowl, combine flour, baking soda, salt and cinnamon. In a 1-qt. glass container, layer flour mixture, brown sugar, 1/2 cup chocolate chips, cranberries, walnuts, oats and remaining chips. Cover and store in a cool, dry place up to 6 months. Yield: 1 batch (about 4 cups total)., To prepare cookies: Preheat oven to 350°. In a large bowl, beat butter, egg and vanilla until blended. - Mix the salt and baking soda with the flour, then layer the ingredients into a 1 quart, wide mouth jar. Use scissors to cut a 9 inch-diameter circle from calico. Place over lid, and secure with rubber band. Tie on a raffia or ribbon bow to cover rubber band.
- Enclose a card with the following mixing and baking directions: Chocolate Chip Cookies 1. Preheat oven to 375 degrees F (190 degrees C). 2. In a large bowl, cream 1 cup of unsalted butter or margarine until light and fluffy. Beat in 1 egg and 1 teaspoon of vanilla. Mix in cookie mix. - Preheat oven to 350°F.
- Using a hand mixer, cream together butter and brown sugar in a large bowl. Add the egg and vanilla and beat until thoroughly mixed.
- In a medium bowl, stir together oats, flour, cocoa powder, baking soda, salt, cinnamon and nutmeg. Slowly add dry ingredients to butter mixture, using the hand mixer set to lowest setting.
- With a spoon, stir in cranberries, sunflower seeds and chocolate chips. Drop cookie dough by the teaspoonful on a baking sheet lined with parchment paper.
- Bake cookies for 12 to 15 minutes. Remove from oven and let sit for 2 minutes before removing and placing on a cooling rack. The cooling rack should be on top of a baking sheet or wax paper - something to catch the icing drips.
- Meanwhile, in a small bowl, mix icing sugar, water and vanilla until smooth. If necessary, add tiny amounts of water until mixture can be drizzled. When cookies have cooled, dip a fork in the icing mixture. Let the icing lightly drizzle over the cookies, moving the fork back and forth above the cookies.
