CHOCOLATE-MACADAMIA NUT TART

- Pate Sucree:In the bowl of a food processor, combine flour and sugar. Add butter, and process until mixture resembles coarse meal, 10 to 20 seconds. In a small bowl, lightly beat egg yolks; add ice water. With machine running, add the egg mixture in a slow, steady stream through the feed tube. Pulse until dough holds together without being wet or sticky; be careful not to process more than 30 seconds. To test, squeeze a small amount together: If it is crumbly, add more ice water, 1 tablespoon at a time. Divide dough into two equal balls. Flatten each ball into a disk, and wrap in plastic. Refrigerate at least 1 hour. Dough may be frozen up to 1 month. To thaw, transfer disks to refrigerator overnight, or let stand at room temperature 1 hour.
- Tart:Preheat oven to 400 degrees. On a lightly floured surface, roll out one disk of pate sucree to a 14-inch round, about 1/8 inch thick (reserve remaining disk for another use). Fit into an 11-inch round tart pan with removable bottom; trim dough flush with rim. Use trimmings to patch any thin spots in shell. Refrigerate 30 minutes or up to overnight.
- Meanwhile, in a large bowl, whisk together eggs, sugar, and bourbon until combined. Whisk in flour and salt, then whisk in butter. Stir in chocolate until combined. Pour mixture into chilled tart shell. Cover top with nuts, pressing them halfway down into the filling.
- Bake 10 minutes. Reduce oven temperature to 350 degrees and continue baking until crust and filling are golden, about 35 minutes more. If tart is browning too quickly, tent with aluminum foil. Transfer pan to a wire rack and let cool completely. Tart can be stored in an airtight container at room temperature up to 2 days.

- Heat oven to 180C/160C fan/gas 4. Roll the pastry out on a lightly floured surface and use to line a 20cm loose-bottomed tart tin. Fill the tart with baking paper and baking beans, bake for 25 mins, then remove the baking paper and beans. Continue to cook for 10 mins more until golden. Remove from the oven and cool.
- Melt the chocolate and butter together in a large bowl over a pan of simmering water. Whisk the eggs and maple syrup together, then stir into the chocolate with most of the nuts. Pour into the tart shell, top with the remaining nuts and bake for 30-40 mins until set. Cool and serve with vanilla ice cream or double cream.

- In a small bowl, mix flour, hazelnuts, brown sugar and salt; cut in butter until crumbly. Gradually add ice water, tossing with a fork until dough holds together when pressed. Shape into a disk. - Make the pastry. Cream together the butter and sugar, then add flour and almonds. Bring everything together with the egg. If the pastry is very soft, chill for 20 mins. If not, roll out to fit a deepish 23cm fluted flan tin; if the pastry breaks, press scraps of pastry into the gaps, leaving a slight overhang. Chill for 20 mins.
- Heat oven to 200C/fan 180C/gas 6. Line the case with baking parchment and baking beans, then bake for 10 mins. Remove beans and cook for another 10 mins until golden.
- Meanwhile, toast the nuts in a dry pan until starting to brown. Scatter over 4 tbsp of sugar, cook until it caramelises, then tip nuts onto a baking tray lined with parchment. Leave to cool, then roughly chop. Over a pan of barely simmering water, melt the chocolate, butter and alcohol together, then set aside to cool slightly. Over the same pan, beat the egg, yolks and remaining sugar until pale and fluffy. Take off the heat, then fold in the chocolate mix.
- When case is cooked, remove from oven and turn the heat down to 160C/fan 140C/gas 3. Scatter most of the hazelnuts over the base, then tip in the chocolate mix, pressing it down slightly. Cook the tart for 15-20 mins until the chocolate has almost set. Leave to cool, then serve scattered with the remaining nuts. Can be made up to 1 day ahead.

- FOR PASTRY: In a bowl, combine the butter and confectioners' sugar. Using a wooden spoon, cream together until very light and fluffy. Add the egg and salt and beat until combined. Add the flour and stir until the mixture comes together to form a dough. Divide the dough in half and pat each half into a ball. Wrap in plastic wrap and refrigerate 1 ball for 2-3 hours or as long as overnight. Reserve the other half to make another tart; it can be frozen for up to 2 months.
- Preheat an oven to 325 degrees.
- On a lightly floured work surface, roll out the ball of dough into a round about 12 inches in diameter and 1/8-1/4 inch thick. Drape the round over the rolling pin and transfer to a 10-inch tart pan with a removable bottom. Ease the pastry into the tart pan, pressing it gently against the bottom and sides. Trim the edges even with the pan rim. Place in the refrigerator to chill for 15 minutes.
- Prick the bottom and sides of the pastry with a fork. Bake until golden, 10-12 minutes. Transfer to a rack to cool. Leave the oven set at 325 degrees.
- FOR FILLING: In a large bowl, whisk together the eggs, brown sugar, corn syrup, molasses, melted butter, vanilla and cinnamon until well blended. Add the salt, almonds and chocolate and mix to coat evenly.
- Pour the filling into the tart shell and bake until the center is set, 35-40 minutes. To test, press gently on top with your fingertips. Transfer to a rack and let cool.
- TO SERVE: Remove the pan sides and, using a spatula, slide off the pan bottom onto a serving plate. Cut into wedges and serve with whipped cream.
