CHOCOLATE-COCONUT BARS
Inspired by a much-loved chocolate-coconut candy bar, these are the perfect spur-of-the-moment treats for the event that almost slipped your mind: Premade sugar cookie dough does half the work for you!

- Preheat the oven to 350 degrees F. Cut a piece of foil 9- by 23-inches. Butter the corners and sides of a 9- by 9-inch baking pan. Line the pan with the foil, leaving an overhang on two sides. Fold the overhanging foil to make them doubly thick. (This will make it easier to lift the bar out of the pan.)
- For the topping: Whisk the coconut cream with the egg white and vanilla in a medium bowl. Toss the shredded coconut with the flour in another medium bowl. Stir the shredded coconut mixture into the coconut cream mixture. Set aside.
- For the base: Whisk the flour with the cocoa powder and salt in a small bowl. Put the cookie dough on a clean work surface and dump the flour mixture on top. Knead the flour mixture and dough together until it is dark and homogenous. Sprinkle a little extra flour on the work surface, and use a rolling pin to gently press and roll the dough into a 7- or 8-inch square; don't worry if it cracks a bit. Put the dough in the prepared pan, using your fingers to press it evenly into the sides and corners.
- Scatter the coconut topping evenly over the base, making sure you cover the edges well and being sure not to press down so that the coconut mixture lies on top of the dough. Scatter the chocolate on top and press it lightly into the coconut. Bake until the coconut is a toasted golden brown, the topping seems dry and a toothpick inserted in the center comes out clean, about 30 minutes. Cool completely on a rack before gently lifting out of the pan by the overhanging foil, about 20 minutes. Slice into 16 square bars.
NO-BAKE CHOCOLATE OATMEAL BARS
Yummy oatmeal and chocolate mix nicely together to make a crowd-pleasing square perfect for potlucks or cookie exchanges.

Steps:
- Grease a 9-inch square baking dish with cooking spray.
- Melt butter in a saucepan over medium heat. Stir in brown sugar and vanilla extract. Add oats and cook over low heat until combined, 2 to 3 minutes. Spread 1/2 of the oat mixture into the prepared pan.
- Melt chocolate chips with peanut butter in small heavy saucepan over low heat, stirring frequently until smooth, about 4 minutes. Pour chocolate mixture over oat layer and spread evenly. Crumble remaining oat mixture over chocolate, pressing in gently.
- Cover with plastic wrap and chill until set, 2 to 3 hours or overnight. Bring to room temperature before cutting into bars.

Steps:
- Preheat oven 350°.
- Pan required is ungreased 15x10-inch jelly- roll pan.
- Stir together flour, oats, baking soda and salt; set aside.
- In large bowl, cream 1 cup butter and brown sugar till fluffy; beat in eggs and vanilla.
- Stir in dry ingredients, mixing till completely combined.
- In a heavy saucepan, combine chocolate chips, condensed milk and the 2 tablespoons butter.
- Cook and stir over medium-low heat till chocolate and butter have melted.
- Remove from heat; stir in nuts and vanilla.
- To assemble, pat 2/3 of dough into pan (damp fingers work best). Spread chocolate mixture over dough.
- Take remaining dough and "dot" chocolate with small bits till it's all used up.
- Bake at 350° for 25-30 minutes. DO NOT over bake.
- Chocolate will still look moist.
- Cool on wire rack.
- Cut into squares.
- Store in an AIRTIGHT container!
CHOCOLATY RAISIN OAT BARS
These attractive layered bars have a similar taste to chocolate-covered raisins. "Yum!" is usually how folks describe every bite.

- In a microwave, combine milk and chocolate. Microwave on high for 2 minutes or until chocolate is melted; stir until smooth. Stir in raisins; set aside to cool slightly. , In a large bowl, cream butter and brown sugar until light and fluffy. Beat in vanilla. Combine the remaining ingredients; gradually add to creamed mixture and mix well (dough will be crumbly). Set aside half for topping. , Press remaining crumb mixture into an ungreased 13-in. x 9-in. baking pan. Spread with the chocolate raisin mixture. Sprinkle with reserved crumb mixture; press down lightly. , Bake at 375° for 25-30 minutes or until golden brown. Cool on a wire rack. Cut into bars.

STICKY ROAD CHOCOLATE BARS
Steps:
- Special Equipment: off-set spatula, parchment paper, 12 by 8 1/2-inch sheet pan
- Preheat oven to 325 degrees F.
- In a medium bowl, sift flour, baking powder and salt together. In a large bowl using a handheld mixer on medium high speed, cream the butter and brown sugar until light and fluffy, about 3 minutes. Add the egg and mix until well combined. Add flour mixture in batches and blend until combined and crumbly. Fold in melted chocolate and the pecans. Butter a quarter sheet pan. Line the pan with a piece of parchment paper and butter the parchment. Press dough evenly into the sheet pan and prick surface evenly with a fork. Bake until firm in the center, about 20 minutes. Let cool and prepare the glaze.
- In a medium saucepan over medium heat, melt butter, then add sugar, corn syrup and condensed milk. Cook until all ingredients are dissolved and a golden color is reached, about 10 to 12 minutes. Fold in the pecans and coconut. Pour the hot glaze over the cooled chocolate bars and quickly chill in the freezer to let glaze set. Cut into bars and serve.
OATMEAL RAISIN CHOCOLATE CHIP BARS
One of my favorite cookie bar recipes! These are gooey and moist (as long as they are not overbaked), and I love the combination of ingredients, sweet and somewhat spicy! I found the recipe on a travel and lodging directory. It is a specialty recipe of the Creekside Inn Bed and Breakfast in Paradise, Pennsylvania.

- In a small bowl, combine flour, baking soda and spices; set aside.
