CHUNKY APPLE CAKE

After taste testing apple cake recipes, I've found this particular recipe the best. Full of old-world comfort, the yummy brown sugar sauce really makes the cake special. For a festive occasion, top with a dollop of whipped cream. -Debi Benson, Bakersfield, California

Steps:

  • In a large bowl, cream the butter, sugar and vanilla. Add eggs, 1 at a time, beating well after each addition. Combine the flour, cinnamon, nutmeg, salt and baking soda; gradually add to creamed mixture and mix well (batter will be stiff). Stir in apples until well combined., Spread into a greased 13x9-in. baking dish. Bake at 350° for 40-45 minutes or until top is lightly browned and springs back when lightly touched. Cool for 30 minutes before serving., Meanwhile, in a small saucepan, combine brown sugar and butter. Cook over medium heat until butter is melted. Gradually add cream. Bring to a slow boil over medium heat, stirring constantly. Remove from the heat. Serve with cake.

  • Preheat oven to 425°. In a large bowl, toss apples with brown sugar and 2 teaspoons cinnamon., In another large bowl, beat 1 cup sugar, oil, eggs, orange juice and vanilla until well blended. In a third bowl, whisk flour, baking powder and salt; gradually beat into sugar mixture., Transfer half the batter to an ungreased 13x9-in. baking pan. Top with apples. Spread remaining batter over apples. Mix remaining cinnamon and sugar; sprinkle over top. Bake 10 minutes., Reduce oven setting to 375°. Bake until golden brown and apples are tender, 35-45 minutes. Cool on a wire rack.

Steps:

  • To make cake: Preheat oven to 350°F. Combine granulated sugar, flour, baking soda, cinnamon and salt in a large mixing bowl. In a separate mixing bowl, combine eggs, apples, oil and vanilla. Add mixture to the dry ingredients, and stir just until well mixed. Batter will be thick. Pour cake batter into greased 13 x 9-inch pan. Sprinkle with brown sugar and cinnamon. Bake 50 to 60 minutes, or until a toothpick inserted in center comes out clean. To make Caramel Sauce: Combine butter, sugars, and evaporated milk in medium saucepan over medium high heat. Stirring constantly, bring to a boil for 1 minute. Add cinnamon and vanilla. Cool. Cut cake and serve with caramel sauce. If desired, top with ice cream or whipped topping.

Steps:

  • In large mixing bowl combine sugar, oil, eggs, and vanilla. Mix with an electric mixer until well combiined (about 2 minutes).
  • In seperate bowl wisk together flour, soda, salt, cinnamon and nutmeg.
  • Add dry ingredients to liquid mixing with an electric mixer--batter will be thick.
  • Fold in walnuts, raisins and apples until all is incorporated.
  • Pile batter into a well greased and floured 12 cup Bundt pan or well greased and floured 9 x 13 x 2 pan.
  • Bake for one hour at 350 or until cake tester comes almost clean.
  • If using Bundt pan let cake cool in pan for 20 minutes and turn onto to rack to continue cooling.
  • If using 9 x 13 x 2 pan cool in pan and cut cooled cake into squares and serve directly from pan.
