CINNAMON-SUGAR CORN CASSEROLE
This is a great casserole that warms over well when baked ahead of time. From "Little Rock Cooks" cookbook.

Steps:
- Heat 1/2 cup butter and 1/2 cup sugar in a medium size pan until butter melts.
- Stir in flour and blend well; remove from heat Gradually stir in milk Add eggs and baking powder and mix well Fold in corn and pour into a buttered 2 quart casserole Bake at 350 degrees for 40 minutes or until a knife comes out clean when inserted near center Brush with melted butter Sprinkle with sugar and cinnamon.

CINNAMON-SUGAR POPCORN
I first tried this when I was visiting my sister in West Virginia. After trying it, I loved it, however I neglected to ask her for the recipe. 10 years later, I have it, and I still love it! The kids can help make it if you use an air popper (which I did to reduce fat and calories...there's enough in the butter!) I used my deep dish lasagna pan to cook it in the oven. You can use a roasting pan or any other large, deep dish pan. It makes a lot, so either invite your friends or store it in an airtight container for later.

Steps:
- Preheat an oven to 250 degrees F (120 degrees C). Pop the popcorn using an air popper according to manufacturer's directions. Place into a large mixing bowl, and set aside.
- Melt the butter in a small saucepan over medium heat. Stir in the sugar, cinnamon, salt, and vanilla, and cook until thick and bubbly. Pour over the popcorn, and stir until the popcorn is evenly coated. Spread the popcorn into a large roasting pan.
- Bake in the preheated oven 10 minutes, then turn the heat off, and allow the popcorn to stay in the oven 20 minutes longer. Remove from oven, and cool completely before serving.

CINNAMON CORN
This came from a luncheon at church. It was served with ham and got scarfed up quickly. If it's too much sugar for you then you can use less. Hope you will like it, too.

- 1. Preheat oven to 350. Lightly grease a 1 1/2 quart casserole dish.
- 2. In a large saucepan, heat butter and 1/2 cup sugar until butter is melted. Mix in flour, then remove from heat. Whisk in evaporated milk. Then mix in corn. Pour into casserole dish.
- 3. Bake for 60 minutes, until tested clean in the center. Sprinkle 1/4 cup sugar and cinnamon over top.

- Mix granulated sugar and cinnamon together in a small bowl; set aside.
- In a large pot with a lid, heat oil over medium-high heat until hot, but not smoking. Add popcorn kernels and cover. When kernels begin popping, carefully lift lid and sprinkle in confectioner's sugar. Replace lid and continue cooking, shaking pot frequently, until popping begins to slow. Sprinkle with cinnamon-sugar mixture. Replace lid and continue shaking pot until popping has almost stopped (be careful not to burn). Sprinkle with salt and serve immediately.

- Preheat oven to 250 degrees F (120 degrees C). Line baking sheets with parchment paper.
- Combine butter, corn syrup, and cinnamon candies in a pot over medium heat. Bring to a boil, and cook for 5 minutes. Pour the syrup over the popcorn in a large, heatproof bowl, and stir to cover the popcorn as evenly as possible. Spread the popcorn out onto the prepared baking sheets.
- Bake in the preheated oven until the candy coating is set, about 30 minutes.

- Pour the oil into a large, deep pot (with a lid). Heat it over medium-high heat on the stove. Place 1 popcorn kernel in the pot with the oil.
- When the kernel pops, the oil is at the right temperature. Mix in the sugar and cinnamon to the oil. Add the popcorn kernels and cover.
- Shake the pot (requires a little arm muscle here) back and forth over the heat. Kernels should start popping within two or three minutes. Continue to shake while all of the kernels pop-- may take up to 10 minutes. Once the popping has stopped, remove from heat immediately so they don't burn.
- Spread on wax paper or a silicon liner to let cool slightly and allow the sugar to harden on the kernels a little bit. Drizzle melted butter over top while cooling.
