CINNAMON COFFEE BARS
This is a quick and easy bar. It has raisins and nuts in it. Great with a hot cup of coffee or even a cold glass of milk. My daughter likes them as an after school snack. Cut into bars and frost while still warm with confectioners' sugar glaze or let them cool and frost with cream cheese icing.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 13x9-inch baking dish.
- Beat shortening and brown sugar with an electric mixer in a large bowl until smooth. Blend egg into the shortening mixture. Add hot coffee and stir.
- Sift flour, baking powder, cinnamon, baking soda, and salt together in a separate bowl; stir into the shortening mixture. Fold raisins and chopped nuts into the batter; spread into the prepared baking dish.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 18 to 20 minutes. Cool in the pan for 10 minutes before removing to cool completely on a wire rack.

CINNAMON COFFEE SCONES
Two of me favorite thhings cinnamon and coffee! This is a grand breakfast scone thats a bit on the lighter side.

Steps:
- Stir together the flour, cinnamon, and Splenda.
- Cut the margarine into tablespoon pieces and blend with the pastry blender or two knives into the dry mixture (margarine pieces should be the size of small peas.).
- Mix together the eggs, coffee, and milk.
- Stir into the dry mixture to form a soft dough.
- Stir in the fruit and nuts.
- Turn dough out onto a floured board and gently pat into a circle of dough about 1/2" thick.
- Cut out rounds with floured biscuit cutter and place them on a greased baking sheet.
- Gently brush tops with milk and sprinkle with sugar.
- Bake in a preheated 400° F oven for 12 to 15 minutes or until golden brown.

COFFEE WITH CINNAMON
Steps:
- Place 1 stick of cinnamon in each of 4 coffee cups and pour in the hot coffee. Add a dollop of whipped cream and a sprinkle of cinnamon.
CINNAMON COFFEE
I considered not posting this since it's not really a recipe, but I was so happy when I discovered this that maybe someone else will be, too! I'm not a fan of flavored coffees (most are too sweet), but cinnamon is an exception. I make it this way several times a week. The amounts listed are VERY approximate; I always just eyeball my coffee and am not sure how much I use. Just go with however you make your normal brewed coffee and sprinkle cinnamon to taste!

- Sprinkle some ground cinnamon on the coffee grounds, and brew as usual.

CINNAMON DOLCE ICED COFFEE
Rich, refreshing iced coffee sweetened with the flavors of brown sugar and cinnamon. Divine!

Steps:
- Add all ingredients to a small saucepan and set over medium heat. Cook, stirring occasionally, until heated through and the sugar has dissolved, about 5 minutes. Remove from heat and let sit for 15 minutes. Remove cinnamon stick. Keeps refrigerated in an airtight container for up to 1 week.
- Fill a tall glass with ice cubes. Add coffee concentrate, 2 tablespoons of cinnamon dolce syrup (add less or more depending on your preference), and half and half to desired point of creaminess. Drop in a straw and serve.
