CRANBERRY CITRUS DRESSING

Steps:
- Start by making a simple syrup: dissolve the sugar in the water in a medium saucepan. Add vanilla beans and bring to a simmer. Add the orange juice and cranberries, a dash of salt and some freshly ground black pepper, to taste. Simmer until cranberries begin to pop and become tender, about 3 to 5 minutes. Remove from heat and stir in Dijon mustard. Chill cranberry sauce until ready to serve. The sauce can be made up to 2 days ahead of time. Just before serving, garnish sauce with freshly grated orange zest.

This has been a 'trade secret' for years, but it's so good I decided to share it! It's everyone's favorite, and can even be poured over a block of cream cheese and served with crackers for a fun holiday appetizer.

- In a medium saucepan, boil water and sugar until the sugar dissolves. Reduce the heat to simmer, and stir in cranberries, pureed orange, apple, pear, dried fruit, pecans, salt, cinnamon, and nutmeg. Cover, and simmer for 30 minutes, stirring occasionally, until the cranberries burst. Remove from heat, and let cool to room temperature.

CITRUS-CRANBERRY SAUCE
Steps:
- Remove the peel and pith from oranges with a pairing knife, cut each section into quarters.
- In a heavy saucepan over medium heat combine oranges, cranberries, sugar, water, and ground ginger. Cook for 15 minutes, stirring occasionally. Remove from heat and stir in lemon and lime juice. Cover sauce and chill before serving. Can be made up to 3 days prior to serving.
CITRUS-SHERRY CRANBERRY SAUCE
Steps:
- 1. Place all ingredients except for the ginger in a saucepan over medium heat. Bring to a simmer and cook for about 15 min, until cranberries are tender. Raise heat tot high for 5 min to boil off the alcohol, then remove from heat and discard the cinnamon stick. (If you prefer a thicker, more jam-like cranberry sauce, gently simmer until it's a little bit looser than you like-it will thicken somewhat as it cools.) 2. Fold in the candied ginger and allow to cool to room temperature before placing in the refrigerator until needed.

- Remove peel and pith from oranges and cut into large pieces.
- In a saucepan over medium heat, combine oranges, cranberries, sugar, water and ground ginger.
- Cook, stirring frequently for 15 minutes.
- Remove from heat and stir in lemon and lime juices.
- Cover and chill thoroughly before serving.
- Ideally made the day before you plan to serve.
CHERRY CRANBERRY SAUCE
My mother-in-law makes this super-easy sauce every Thanksgiving. Cherries give tart cranberries a slightly sweet flavor. I serve it alongside turkey, pork and ham.

DRIED CHERRY CRANBERRY SAUCE
This recipe is a great change of pace from the more common orange-cranberry sauce combinations. We especially like it around the holidays served alongside a roast turkey. It's so much better than canned cranberry sauce. -Janet Briggs

- Place cherries in a bowl and cover with warm water. Let stand for 10 minutes or until plumped. Drain cherries, discarding water. , In a large saucepan, combine the sugar, water, cranberries and cherries. Cook and stir over medium heat until the berries pop, about 15 minutes. Remove from the heat and skim foam from top of mixture. Cool to room temperature. Cover and store in the refrigerator.
