- For the cake: Preheat the oven to 350 degrees F. Spray a bundt pan with cooking spray.
- Bring the cola to a boil in a medium saucepan over medium-high heat and reduce down to about 1 1/4 cups, about 12 minutes. Reserve 1/4 cup in a separate bowl. Add the butter and oil to the remaining cola in the pan and cook over medium-low heat until the butter is melted. Add the granulated sugar and stir until it is mostly dissolved. Take off the heat and let cool, then whisk in the sour cream, vanilla and eggs.
- Whisk together the flour, baking soda, baking powder and salt in a large bowl. Add the cola mixture and whisk until incorporated. Pour the batter into the prepared bundt pan and bake until a wooden skewer inserted into the center comes out clean, about 1 hour 10 minutes. Let the cake cool in the pan for 5 minutes.
- Set a cooling rack over a parchment-lined baking pan. Invert the cake onto the rack. Poke the cake all over with a wooden skewer, then spoon the reserved cola reduction all over the cake. Let cool completely.
- For the glaze: Combine the butter, cocoa powder and 2 tablespoons of the cola in a medium saucpan and cook on medium low until the butter is melted. Stir to combine, then stir in the confectioners' sugar until incorporated. Add the additional cola, about a half tablespoon at a time, until the mixture is a thick drizzling consistency.
- Drizzle the glaze over the cake.

- Preheat oven to 350°. Grease a 13x9-in. baking pan., In a large bowl, whisk the first 5 ingredients. In a small saucepan, combine cola, butter and cocoa; bring just to a boil, stirring occasionally. Add to flour mixture, stirring just until moistened., In a small bowl, whisk eggs, buttermilk and vanilla until blended; add to flour mixture, whisking constantly., Transfer to prepared pan. Bake 25-30 minutes or until a toothpick inserted in center comes out clean., About 15 minutes before cake is done, prepare glaze. In a small saucepan, bring cola to a boil; cook 12-15 minutes or until liquid is reduced to 1/2 cup. Stir in butter and cocoa until butter is melted; remove from heat. Add confectioners' sugar; stir until smooth. Pour immediately over hot cake.

- Preheat oven to 350 degrees F.
- Line two twelve cup muffin tins with cupcake lines.
- In a large bowl, using a wire whisk, stir together flour, white or brown sugar, cocoa, soda, powder, and salt.
- Stir in all wet ingredients- vanilla, eggs, oil, and coffee or cola, and buttermilk, to dry mixture, using a large wire whisk, or beat on electric mixer on medium speed for two minutes.
- Pour into prepared pan.
- Batter will be thin.
- Bake for 20-24 minutes or until cupcakes test done.
- (Cupcakes should be slightly puffed up in centre and spring back when touched).
- Freeze frosted or unfrosted.
- Makes 18 to 24 (medium).
- Recipe can be doubled or tripled.
COCA COLA CAKE

- Preheat oven to 350 degrees. Combine flour and sugar in large bowl. In small saucepan, heat 1 cup butter, 3 tablespoons cocoa and 1 cup Coca-Cola. Bring to simmer and then pour over flour mixture. Stir well. Add buttermilk, eggs, baking soda and vanilla. Mix. Add marshmallows. Pour into 9x13 pan for 35 minutes.
- To make the frosting, in a saucepan combine 1/2 cup butter, 6 tablespoons Coca-Cola, and 3 tablespoons cocoa. Bring to a boil. Pour over bowl with powdered sugar. Beat well. Spread evenly over warm cake. Let cool. Serve.

- Cake: Combine 1 cup coca-cola with 1/2 cup buttermilk and set aside.
- Beat 1 cup softened butter at low speed until creamy, then add 1 3/4 cup sugar.
- Beat until blended then add 2 eggs and 2 tsp vanilla.
- Combine 2 cups of flour, 1/4 cup of cocoa, 1 tsp baking soda.
- Once this is mixed, alternate between adding it to the cola mixture and the butter mixture.
- Now blend everything together while adding 1 1/2 cup of mini marshmallows.
- Stir until the marshmallows are blended into the mixture.
- Pour batter into 13x9x2 greased pan.
- Bake at 350 for 30-35 minutes.
- Remove from oven and cool for 10 minutes then pour frosting over cake.
- Frosting: Combine 1/2 cup of butter, 1/2 cup coca-cola, and 3 T of cocoa in a saucepan and bring to a boil.
- Stir continuously.
- Remove from heat and whisk in sugar and vanilla.

- Mix in eggs and Coca Cola and stir until a smooth batter forms.

There are several recipes out there for Coca Cola cake, but none exactly like this one...Just a small piece of this rich and chocolaty cake will satisfy any sweet tooth! It is VERY rich, but also very moist. A must for choc-a-holics! I clipped this recipe from the Clearwater Sun newspaper about 30 years ago and it has become a family favorite.

- Using a saucepan, combine the Coca Cola, butter, oil and cocoa; bring to a boil. Remove from heat and add the marshmallows; let melt.
- Combine the flour, sugar and soda in a bowl. Combine the buttermilk, beaten eggs and vanilla in another bowl. In a large mixing bowl, combine the dry mixture with the liquid mixture; stir in the warm cocoa mixture. Bake in a 9 x 13 inch pan at 325 degrees for 45 minutes.
- Icing: Using a saucepan, combine the 1/4 Celsius cocoa, 6 tablespoons Coca Cola and 1/2 Celsius butter. Bring to a boil. Remove from heat and add 1 box confectioner's sugar, 1 cup chopped nuts and 1 teaspoon vanilla. Pour over cake while it is still warm in baking pan. Cool and cut into squares.
