COCONUT FLOUR COOKIES
A 100% coconut flour cookie for those who cannot eat wheat products or who prefer using other types of flour. This recipe also uses coconut sugar and coconut oil and so it has a nice light coconut flavor. This is also a very simple recipe that most people will have no problem making...and enjoying.

Steps:
- Blend together coconut oil and coconut sugar using an electric mixer or a fork in a mixing bowl until fluffy. Add eggs and vanilla extract; mix thoroughly. Combine coconut flour and salt in a separate bowl; pour into the mixture and blend well. Fold in pecans.
- Form dough into a ball and wrap in waxed paper or plastic wrap. Refrigerate for at least 1 hour.
- Preheat the oven to 350 degrees F (175 degrees C).
- Roll dough into small balls, 1 to 1 1/2-inches wide. Place balls a few inches apart on a baking sheet. Sprinkle a tiny bit of coconut sugar on top of each cookie and flatten using the bottom of a glass to 1/4-inch thickness.
- Bake in the preheated oven until edges start to brown slightly, about 8 minutes.

CRISPY COCONUT COOKIES
This recipe was passed along to me a number years ago when I made mention I was looking for new recipes to add to my collection for Christmas baking. This excellent crispy cookie is not only great at Christmas, it's one of those simple delights great to serve for any occasion ... one of those 'looks simple but you can't just eat one' kind of cookie. I suspect the cream of tartar makes for a crispy light cookie. NOTE: any fine coconut can be used when making these cookies, do not substitute with medium or coarse coconut, they just do not work for these cookies. Fine coconut is readily available in the baking section of most stores.

Steps:
- Cream shortening with sugar.
- Add beaten egg and extract.
- Sift flour, baking soda, cream of tartar and add gradually to creamed mixture.
- Add the fine dessicated coconut and mix throughly.
- Roll into small balls, put on a greased cookie sheet, press down with a fork.
- Bake for 15 minutes at 325, cookie should be nicely colored.
- A reminder that ovens vary, so do watch your cookies!
- Yield will depend on the size cookie you make, so mine is a general yield for amount of flour used.

- 1. Preheat the oven to 375°F.
- 2. Line two cookie sheets with parchment paper and set aside.
- 3. In a small bowl, stir the coconut flour, baking soda, xanthan gum, and salt together.
- 4. In a large bowl, beat together the butter, vanilla extract, egg whites, applesauce, & coconut milk. This mixture will seem way too watery at first but don't worry, coconut flour sucks up moisture and needs this much liquid.
- 5. Pour the dry ingredients into the wet and stir until well combined.
- 6. Stir in the chocolate chips.
- 7. Scoop by the tablespoon onto the cookie sheet, then flatten out the balls with your fingertips. These cookies won't spread while baking so flatten them to the size you want the final product to be.
- 8. Bake for 15-20 minutes until lightly brown. Makes 30 cookies.

- Heat the oven to 190C/170C fan/gas 5. Beat the butter in a large bowl using an electric whisk or in a stand mixer until very soft. Beat in both sugars and the vanilla until light and fluffy, then beat in the egg until just combined. Sift in the flour and a pinch of salt and stir to combine. Fold in 100g of the toasted coconut.
- Roll the dough into 14-16 balls (about 45g each) and arrange on a baking sheet lined with baking parchment, well spaced apart. Flatten each slightly using the palm of your hand and bake for 12-15 mins until golden brown and slightly firm to the touch. Leave to cool on the sheet briefly, then transfer to a wire rack to cool completely.
- Break the chocolate into pieces and tip into a heatproof bowl, then melt in 20-second bursts in the microwave. Or set the bowl over a pan of simmering water, ensuring the bowl doesn't touch the water, stirring until smooth. Dip one half of each cookie into the melted chocolate, then lay on a sheet of baking parchment and sprinkle with the remaining toasted coconut. Leave to set for about 30 mins.

- Combine butter, sweetener, lemon extract, liquid stevia, and salt in a large bowl. Add eggs one at a time, beating briefly after each addition. Stir in coconut flour. Let dough rest until slightly thickened, about 5 minutes.
