COCONUT & LIME FISH
Bake white fish in an aromatic paste of chilli, ginger, coriander, lime and creamed coconut, for a quick, Asian-inspired midweek meal

Steps:
- Heat oven to 200C/180C fan/gas 6. Zest and juice the limes. In the small bowl of a food processor, whizz together the lime zest and juice with the remaining ingredients, except the fish, until a smooth paste forms. Taste and add a little more fish sauce if you feel it is needed.
- Put the fish on a baking tray and spread over the coconut mixture. Bake in the oven for 15-20 mins until the fish is cooked through. Serve with steamed rice and thin-stemmed broccoli.

GINGER AND CHILLI BAKED FISH
This looks so wonderful! I haven't made this yet but will soon, my mouth is watering already! I would serve this on a bed of coconut or lemon rice with an Asian salad and fresh steamed bok choy.

- Preheat the oven to a hot 220 degree C.
- Make 4 deep slits diagonally across both sides of the fish.
- Place a large sheet of foil, with sides overlapping, in a large shallow baking dish.
- The dish needs to be large enough to hold the fish.
- Spray the foil with cooking oil spray and place the fish on the foil.
- Fill the cavity of the fish with layers of lime slices and ginger slices.
- Combine the oil, fish sauce, grated ginger and garlic in a small bowl.
- Rub mixture into the cuts in the fish and all over the surface.
- Bring foil around fish so it will contain the cooking juices but do not cover the top of the fish.
- Bake for about 20 minutes, or until almost cooked through.
- While fish is baking, combine the palm sugar, chilli, extra fish sauce and lime juice in a small bowl.
- Spoon this mixture over the fish and bake for another 5 minutes or until fish is just cooked through.
- You can use 2 800gram fish if you prefer, but cut the cooking time to 15 minutes.
- The fish can be rubbed with the ginger mixture up to 6 hours ahead, but only bake just before serving.

LIME, CHILLI AND COCONUT CHICKEN
This is my version of a Thai style dish. I certainly wouldn't call it authentic by any standards, but it's still popular with those who have eaten it! If you don't like or don't have lime, you can substitute lemon and get a very similar taste. Also please feel free to add or remove chile to your liking - my husband doesn't like very hot food, so this is a fairly mild version. If you don't have fresh ginger, you can also use the minced variety that comes in a jar. The serving size is listed as 2-4 as we don't eat a lot of meat, so for the 2 of us this will do 2 meals. However, if you don't serve this with veggies and eat a large amount of meat, it may only do 2 meals.

Steps:
- Mix all ingredients except coconut milk and chicken breasts together in a plastic container big enough to also fit chicken into.
- Slice chicken breasts into strips - you should get about 4-6 strips from each chicken breast, depending on the size.
- Put the chicken breasts into the container with the marinade and mix well, making sure all chicken strips are thoroughly coated with the marinade.
- Seal the container and place it in the fridge for at least an hour.
- Remove from the fridge and heat a frying pan on medium-high heat on the stove.
- Take the chicken strips out of the marinade, and scrape all the marinade off. Put the chicken in the pan and cook.
- After one side of the strips are browned, turn over. Then tip the remaining marinade into the pan, around the chicken.
- Cook chicken and marinade for a few seconds, then add coconut milk. Allow to boil, then turn down and simmer for 2-3 minutes, then serve with steamed rice and veggies.

COCONUT FISH CURRY TRAYBAKE

- Heat oven to 200C/180C fan/gas 6. Tip the rice into a roasting tin. Whisk the coconut milk with the curry paste and fish sauce. Nestle the fish into the rice, put the broccoli, pak choi and half the spring onions on top, and season. Drizzle the coconut mixture over everything, cover with foil and cook in the oven for 25 mins or until the veg is cooked through and the fish is flaking apart.
- Serve in bowls, topped with coriander leaves and the remaining spring onions, with lime wedges on the side.
