COCONUT LIME BUTTER COOKIES

- For the cookies: Preheat the oven to 350 degrees F.
- Using a hand or stand mixer, cream the butter and granulated sugar until combined. Add the egg yolks and mix until combined. Add the lemon and lime zest. Add the flour and mix until just combined. Next, add the citrus juice (your choice) and coconut extract and mix the dough until it comes together.
- Scoop out tablespoons of dough, roll into balls between your hands and place on a baking sheet. Bake until not quite starting to turn brown, 12 to 13 minutes. Remove from the oven but keep the cookies on the baking sheet for 3 to 4 minutes. Use a spatula to move them to a cooling rack to cool completely.
- For the icing: Add the powdered sugar, cream of coconut, lemon and lime zest, milk, coconut extract, salt, egg white and lemon and lime juice to a large bowl. Whisk thoroughly until combined, adding either more powdered sugar or more juice until it reaches a pourable but still thick consistency.
- Drizzle the icing across the cookies in several lines, and then repeat in the other direction. Sprinkle the cookies with extra zest before the icing sets.

- In a small saucepan, combine sugar with 3 cups water.
- Bring to a boil.
- Reduce heat and simmer for 5 minutes.
- Chill for 1 hour.
- Stir in lime juice and zest.
- Pour mixture into a shallow metal cake pan and freeze, crushing and stirring the lumps with a fork every 30 minutes for 2 to 3 hours, or until it has a slushy, granular texture.
- Serve immediately.
COCONUT-BUTTERMILK GRANITA
Tangy, refreshing and creamier than the usual granita, this is easy and delicious and doesn't require any special equipment. This wonderful recipe is from Didi Emmons' "Vegetarian Planet" cookbook - one of my favorites - and is best served as she suggests: with mango slices and lemon wedges. Mmmmmmmm! (Prep time includes freezing time.)

- Heat coconut milk and ginger until hot but not boiling.
- Take off heat, cover; and let stand 15 minutes.
- Add sugar and boil, stirring until sugar is dissolved.
- Take off heat again and add buttermilk.
- Strain into a casserole dish and freeze about two hours, then fluff with a fork and freeze for another hour.
- Serve with mango slices and lime wedges.

- Zest the limes and add the zest to the measuring cup. Cut 1 lime in half and squeeze the juice into the measuring cup. Finally, add the simple syrup to the measuring cup and with a small whisk, whisk everything together.
- Pour the mixture into a glass 8x8-inch pan. Carefully place it uncovered into the freezer for at least 6-7 hours. Remove the pan every 2 hours and scrape with a fork. It's okay if some of it is still liquid..just scrape and place back in the fridge and repeat. You'll eventually end up with a consistency like the above photos!
- Scoop out into bowls and serve immediately. Cover the remainder with foil and place back in the freezer for future eating.
