COFFEE MADELEINES

You'll need a shell-shaped madeleine mold for these delicious sponge cookies. Make the madeleines ahead of time, then store in an airtight container at room temperature up to 3 days or freeze up to 1 week.

Coffee Madeleines image

Steps:

  • Grease and flour twenty-four 3-inch madeline molds. Set aside. Beat sugar and yolks in a medium mixing bowl with an electric mixer on medium to high speed for 30 seconds. Add butter, espresso powder, and vanilla. Beat on low speed until combined. Beat in egg whites until combined.
  • Preheat oven to 375 degrees F. Stir together flour, baking powder, baking soda, and salt in a small bowl. Sift flour mixture over the egg yolk mixture; gently fold inches Fold in almonds. Spoon batter into prepare molds, filling each about half full.
  • Bake for 10-12 minutes or until edges are golden and tops spring back when lightly touched. Cool in molds for 1 minute. Using the point of a knife, loosen cookies from molds; invert onto a wire rack. Remove molds, and cool cookies completely on rack. Drizzle Espresso Icing over madeleines, if desired. Cover tightly and store at room temperature up to 3 days.
  • Espresso Icing: Combine 1/2 teaspoons instant expresso powder and 1 tablespoons water in a small bowl. Stir in 1 cup sifted powdered sugar. Stir in additional water 1 teaspoons at a time until a drizzling consistency.

1/3 cup butter, melted and cooled (no substitutes)
2 teaspoons instant espresso powder
1/2 teaspoon vanilla
2 egg whites, slightly beaten
1/2 cup all-purpose flour
1/2 teaspoon baking powder

1/8 teaspoon salt
1/4 cup almonds, very finely chopped
espresso icing (optional, but recipe included below, requires instant expresso powder and powdered sugar)

CHOCOLATE MADELEINES

Madeleine is a shell-shaped confection that is a lovely marriage of small cake and cookie, For true madeleines, you need madeleine molds, which are sold at nearly all cookware stores. However, any mold that holds a quarter cup of batter will work, although the results won't be immediately recognizable as madeleines. But, just as a rose by any other name smells as sweet, so does a madeleine in any other shape taste as sweet.

Steps:

  • Preheat oven to 350°F Spray 10 madeleine molds with vegetable oil spray.
  • Sift together the flour, cocoa, baking soda, and salt, the sift again into a large bowl. In a small bowl, combine the fudge sauce, orange juice concentrate, coffee and liqueur. Mix well and set aside.
  • In the bowl of an electric mixer, combine the egg, egg white, sugar, vanilla, and chocolate extracts and beat on high speed until the mixture doubles in volume. Reduce the speed to low and gradually add the Fudge Sweet mixture, beating just until incorporated. With the mixer at low speed, gradually add the dry ingredients. Stop the mixer and scrape the sides of the bowl often during the process. Do not overmix,.
  • Spoon the batter into the madeleine molds, filling each one-third full. Set the molds on a baking sheet and bake for 15-20 minutes, until firm. Invert onto a wire rack and cool.

Steps:

  • Combine eggs, sugar, and honey in a large bowl. Whisk gently for 4 to 5 minutes. Avoid whisking too vigorously and do not use high speed if using an electric mixer; the end mixture should be light and frothy.
  • Sift flour and baking powder into the egg mixture. Fold in gently until well combined. Add melted butter and salt, stirring well. Cover the bowl with plastic wrap and chill batter in the refrigerator for at least 1 hour.
  • Preheat the oven to 460 degrees F (240 degrees C).
  • Fill silicone madeleine molds with the batter, filling each 3/4 full.
  • Bake in the preheated oven for 1 minute, then reduce the oven temperature to 400 degrees F (200 degrees C). Bake for 4 minutes, then reduce again to 350 degrees F (175 degrees C) for 5 minutes more.
