  • Wash bok choy. Cut stems AND tops into about 1-inch pieces.
  • In a large bowl, combine last 7 ingredients and mix well.
  • Add bok choy to the dressing and toss to coat.
  • Place in a hot wok or large pan and stir-fry over med-high heat for about 8 minutes or until desired tenderness is reached.

Steps:

  • In saucepan over medium heat, mix first 8 ingredients together (soy sauce to chicken broth), stir until thick and smooth.
  • Cook linguine in salted water until al dente. Drain and rinse with cool water.
  • Mix linguine and sauce mixture in bowl.
  • Serve cold or at room temperature with scallions, cucumbers, and sesame seeds as garnish.

Steps:

  • Cut a thick slice from the pak choi root to separate the leaves. Rinse and drain.
  • Heat the groundnut oil in a large wok over a medium heat and add 1 tbsp sesame oil, the garlic, chilli, fish sauce (if using) and pak choi. Toss until coated and clamp a pan lid over them. Reduce the heat and cook for 3-6 minutes, tossing occasionally, just until the leaves have wilted (the stalks should be tender-crisp).
  • Add the rest of the sesame oil and salt. Toss the leaves and serve immediately.

Steps:

  • Cook the egg noodles according to package instructions. Drain and rinse under cold running water. Transfer the noodles to a large bowl.
  • In a small bowl, whisk together the vinegar, oil, soy sauce, sesame seeds, ginger, salt, scallion, and, if using, red pepper. Remove the noodles from the refrigerator and mix with the sesame mixture until well coated. Serve cold or at room temperature.

Steps:

  • Steam or boil pak choi to desired doneness (we like ours to still be a bit firm).
  • Drain choi in a colander and use a wooden spoon to push the choi against the sides of the colander and squeeze out as much water as possible.
  • Once choi is as dry as possible, whisk together soy sauce, vinegar, sugar and green onions in a glass or ceramic bowl. Add choi and toss to coat.
  • Allow to chill in the fridge for one hour.
  • Just before serving, add the sesame oil and sesame seeds and toss to coat. Enjoy!

  • In a saucepan combine the soy sauce, the vinegar, the red pepper flakes, the brown sugar, the peanut butter, the oil, the ginger, and the broth, simmer the mixture, stirring, until it is thickened and smooth, and let it cool slightly. In a kettle of boiling salted water cook the noodles until they are al dente, drain them in a colander, and rinse them under cold water. Drain the noodles well, transfer them to a bowl, and toss them with the sauce. Serve the noodles at room temperature and garnish them with the scallion and the cucumber.

I first had these at a little lunch counter in the building that I worked in. They were very popular and my absolute favorite! The woman who owned the lunch counter also had a catering company and when I went to work for her during the holidays I asked for the recipe and she gave it to me! :) Now I can have them anytime and they are great to keep in the fridge for a quick something or to take to a barbecue or potluck. I promise they will be well received!

Steps:

  • While pasta is cooking, pulse all of the ingredients in a food processor just until well incorporated (do not over blend).
  • When the pasta is cooked, drain, and mix with sauce.
  • Then add carrots and toss (I never leave the carrots out).
  • Chill for a few hours before serving.
  • They are best cold!
  • Garnish with scallions and sesame seeds just before serving.
