Sugared almonds give Dolores Lueken's delicious salad an over-the-top kick that will have guests coming back for seconds. She sent the healthy and flavorful salad from her kitchen in Ferdinand, Indiana.

- In a small heavy skillet, cook and stir the sugar over medium-low heat until melted. Stir in almonds; cook for 1 minute or until lightly browned. Spread onto foil coated with cooking spray; set aside. , In a large salad bowl, combine the mixed greens, romaine, oranges, celery and onions. In a small bowl, whisk the dressing ingredients. Drizzle over salad; add almonds and toss to coat.

COLESLAW WITH BOILED DRESSING

Steps:
- Cut the cabbage in half through the core. Place in a bowl of cold water and refrigerate for 1 hour.
- Make the dressing by mixing together the flour, mustard, sugar and cayenne in a heavy saucepan. Add the butter and melt over low heat. Whisk in the yolks. Quickly add the milk and vinegar and whisk until combined. Stir until the mixture coats the back of a spoon. Season with salt. Transfer to a bowl and chill.
- Drain the cabbage. Cut in half again, core and thinly slice. In a large bowl, combine the cabbage, dressing and celery seed. Season to taste with salt and more celery seed if desired.

FOREVER COLESLAW
I got this recipe from a good friend. This recipe has definately gone around the block many times. Once made up, it can last up to 3 weeks, but will darken with age

Steps:
- Put cabbage, carrots and onion in large bowl.
- Measure vinegar, oil, sugar, salt and celery seed in large saucepan. Bring to boil, stirring frequently. Pour hot over cabbage mixture.
- Stir to mix, pressing down until vegetables wilt and are covered with brine. Cool.
- Store in covered container in refrigerator. Let stand one or two days before eating.
SIMPLE SLAW
Clean and simple. Eight ingredients - apple cider, cider vinegar, cabbage, mustard seeds, celery seeds, sugar, salt and pepper to taste - combine into what ought to be a staple of your repertoire. You'll need to cook the cider down by half before using it, but everything else goes in raw, and the combination matures over the course of a few hours into a side dish that can accompany just about anything grilled or roasted, pulled or hacked.

- In a small pan, bring cider to a boil over high heat. Turn heat down slightly and continue to boil until reduced by about half, about 20 minutes. Allow to cool to warm room temperature, then stir in vinegar.
- Put cabbage, mustard seeds, celery seeds, sugar and salt and pepper in a large bowl. Pour in cider mixture, and toss well to coat.

- Mix cabbage, onion, green bell pepper, red bell pepper, carrots, and olives together in a large bowl.
- Whisk vinegar, oil, sugar, Dijon mustard, salt, celery seed, and mustard seed together in a saucepan. Bring to a boil; cook and stir until sugar is dissolved, about 1 minute. Pour hot dressing over cabbage mixture and toss gently. Cover the bowl with plastic wrap and refrigerate for at least 8 hours or overnight.
