CHRISTMAS EVE CONFETTI PASTA
This easy Christmas dinner has become a holiday tradition in our home. All the prep is done before we attend Christmas Eve service. On returning, I just boil water and saute. It's so colorful with a tossed salad and garlic bread - and always gets raves! - Ellen Fiore, Ridgewood, New Jersey

CONFETTI MACARONI SALAD
The bits of bright red and green in this easy macaroni salad remind me of fun confetti. The inspiration for the dish came from a recipe I found in a church cookbook when I was a young writer responsible for a newspaper's food section. -Renee Page, Rochelle, Illinois

CONFETTI FIESTA PASTA SALAD
I came up with this recipe when trying to find something to take to a potluck BBQ picnic. I wanted something cheap to make that would satisfy and serve a bunch of people. So far on my initial taste tests, it is wonderful! It's spicy, but light, with many beautiful colors, tastes and textures. It does not have a heavy dressing, I'm not usually fond of pasta salads as the dressings always seem to vinegary to me, this is just right. You can vary the ingredients, by adding artichoke hearts, any kind of onions from scallions to purple onions, any additional veggies (cucumber, celery) or any pasta you prefer, cheese would also be a good addition. I tried to not make this too spicy since it was a Boy Scout function feeding a lot of kids. It should go over big, (I hope). These amounts make a ton, so if it's for fewer people, you may want to halve these amounts.

FIESTA PASTA SALAD WITH DILL PICKLES
This dill pickle pasta salad salad has so many different colors that it looks as though there is confetti in it. There is a thousand variations to this salad! My mother adds ham and asparagus to it. I usually use tri-colored pasta in this salad to add even more color. Also I serve green onions on the side. All my friends and family love this so much. I don't think I would be invited on our annual family camping trip if I didn't bring this salad.

CONFETTI JICAMA SALAD
We love jicama dipped in citrus and then sprinkled with salt and jalapenos. I needed to bring a salad to a Fourth of July picnic, so as I ate my jicama, I created one starring this crunchy veggie and its sidekick flavors. I use a mandolin to expedite prep work. -Jan and Frank Ruiz, Yucaipa, California
