Cost per serving $1.05. I found this recipe in Woman's Day magazine. I have not tried this recipe, but I'm posting it for safe keeping. I plan to use sugar free pudding, Cool Whip, cookies, and chocolate.

Steps:

  • You'll need four 6-oz dessert glasses. Prepare pudding as package directs, using milk. After cooking, scrape into a medium bowl and press plastic wrap directly onto surface of pudding. Refrigerate pudding until cold, at least 1 hour.
  • To make parfaits: Put 1/4 cup pudding into each glass. Top each with 2 tablespoon nondairy whipped topping, then crumble 1/2 a cookie onto each. Top with 1/4 cup more pudding and 2 tablespoon topping. Garnish if desired.

Steps:

  • Sprinkle gelatin over 1/2 cup cold water in small saucepan; let stand one minute.
  • Cook gelatin mixture over low heat for 2 minutes, stirring until gelatin dissolves.
  • Stir in sugar, 1 1/2 cups water and coffee granules until dissolved.
  • Pour into 1 quart bowl; chill 4 hours until firm.
  • Once coffee mixture is set, beat whipping cream at medium speed with electric mixer until foamy.
  • Gradually add 2 tablespoons sugar and coffee liqueur, beating until soft peaks form.
  • Pull fork through set gelatin mixture, breaking into small pieces.
  • Spoon 1/2 cup gelatin each into 4 parfait glasses.
  • Top evenly with half of whipped cream mixture, repeating with second layer.
  • Garnish with grated chocolate.

  • Separate the cream from the chocolate sandwich cookies. Place the cookies in a plastic bag and the cream in a small bowl.
  • Using a rolling pin, crush the cookies until they are finely ground.
  • Microwave the cream from the chocolate sandwich cookies for 2 minutes.
  • In a chilled medium bowl, beat the heavy cream using a hand mixer until thick and frothy.
  • Add the cream from the cookies and the powdered sugar. Beat until stiff peaks form.
  • Fold in the chocolate sandwich cookie crumbs, saving some as topping for later.
  • Spoon into a piping bag or plastic bag with a piping tip. Pipe into serving bowls or glasses.
  • Top with remaining chocolate sandwich cookie crumbs and half of a chocolate sandwich cookie, if desired.
