Steps:
- Combine the first 5 ingredients.
- Make 8 thin patties.
- Place 1 piece of ham or bacon and 1 piece of cheese in the middle of each.
- Fold over and be sure the cheese and bacon are covered.
- Whip 2 eggs.
- Dip the beef rolls into the egg, then roll in the bread crumbs.
- Place into casserole dish.
- Bake 1 hour at 350 degrees or until done.
- Make gravy with milk, flour, and soup.
- Pour over rolls and bake until sauce bubbles.
- **I usually bake these as directed without gravy, cool, and then freeze in a ziploc bag. Defrost overnight and then add sauce and bake for 1 hour. OR bake from frozen for 1 hour and then top with sauce and back for an additional hour**.

- Combine first 8 ingredients in a large bowl and mix well.
- Cover a cookie sheet with foil.
- Press chicken mixture into a 8x10 rectangle.
- Place cheese slices on chicken mixture, then top with ham slices.
- Begin rolling from short side of the rectangle (using the foil will help shape the roll and make it easier to roll up).
- Press ends of roll together and place on greased baking sheet with the seam side down. Bake at 350 degrees for 60 -75 minutes or until roll is golden brown and chicken is cooked through.
- Slice to serve.
- To freeze: wrap baked chicken roll, label and freeze.
- To serve: thaw overnight and then bake as above.

CHICKEN CORDON BLEU
Steps:
- Preheat the oven to 350 degrees F.
- Take a piece of chicken and place 2 ounces ham and 1 ounce Gruyere cheese in the middle. Roll up the chicken breast tightly and place toothpicks in the ends and middle. Place the chicken breasts in an oiled baking dish and bake for 18 minutes.
- For the breading: Combine the all-purpose flour, breadcrumbs, wheat flour, rice flour, Cajun seasoning, garlic powder, paprika, salt, pepper and cayenne pepper, mix well, and place on a large platter.
- For the hollandaise sauce: Gently place 4 egg yolks in a food processor and add a pinch of salt, white pepper, paprika, the lemon juice and hot sauce. Place the warmed clarified butter into the food processor very slowly until it thickens. To thicken the sauce, add an egg yolk and to thin it out add warm water.
- Place the baked chicken cordon bleu in the egg wash and then coat evenly with the breading mixture. Repeat process again.
- Deep-fry the breaded chicken at 325 degrees F for 3 minutes. Drizzle the hollandaise sauce over the top of the chicken.
CHICKEN CORDON BLEU ROLL-UPS WITH GINGER 'N' SPICE BLUEBERRY CHUTNEY
Steps:
- Put each chicken breast between 2 pieces of plastic wrap and pound to 1/4-inch thickness, tapering thickness along the edges to 1/8-inch. Set aside until needed.
- Combine the panko and garlic salt in a small bowl and drizzle with oil; toss until coated. Heat a large nonstick skillet over medium-high heat. When the skillet is hot add the panko and toast until light golden, stirring constantly. Pour the toasted panko into a shallow dish.
- In another shallow dish, whisk together the egg whites, milk, cornstarch and mustard.
- Line a jelly roll pan with foil (to catch any juices) then set a large wire rack over foil. Remove plastic wrap from chicken. Put the chicken on a work surface and sprinkle with salt and peppercorns; rub into the flesh. In a small bowl stir together the prosciutto, fontina, blue cheese and chopped basil. Divide the mixture into 6 portions. On each breast, put a portion of the mixture on the bottom half and toward the center. Roll the bottom edge of the breast over the filling then roll up tightly, tucking in the sides. Press firmly on the seam to secure. Roll the chicken in the egg white mixture to coat, then roll in the panko crumbs, pressing firmly. Arrange the chicken on the wire rack in the pan, spacing equally. Let rest for 20 minutes.
- Preheat the oven to 350 degrees F.
- For the chutney: In a heavy 1-quart saucepan add the butter and let it melt over medium-high heat. Add the onion and cook until tender, and stirring often, about 3 minutes. Stir in the vinegar, raisins, ginger, brown sugar, Worcestershire sauce, curry, salt, nutmeg and blueberries. Bring the mixture to a boil, then reduce the heat to low and simmer for 15 minutes, stirring occasionally. Remove from heat and slightly mash the blueberries with a potato masher. Cover the pan and set aside.
- After resting the chicken for 20 minutes, put the pan in the preheated oven and bake until an instant-read thermometer reaches 160 degrees F when inserted into the center of the chicken roll, about 40 minutes. Remove from oven and let the chicken to rest for 5 minutes before serving. Transfer the chicken to a serving platter and serve topped with the chutney, (no need to reheat). Garnish with basil leaves and serve.

- Heat the grill to high.
- Brush the chicken on both sides with oil and season with salt and pepper, to taste. Grill until slightly charred on both sides and just cooked through, about 2 minutes per side. Put a few slices of cheese on each breast, close the cover and let it melt slightly, about 40 seconds. Brush the cut side of lemons with oil and grill, cut side down until golden brown and slightly charred, about 45 seconds.
- Put the chicken on large serving plates, top each breast with 2 slices of prosciutto and some arugula. Squeeze the grilled lemon on top and drizzle with olive oil.

- Line a 12" x 8" swiss roll tin with oiled greaseproof paper or brush a paper case with oil or melted shortening (instructions for making a paper case will follow).
- Preheat oven to 350°F.
- Separate the eggs.
- Beat yolks and add sugar gradually until mixture is lemon coloured.
- Melt chocolate in the water using a double boiler.
- When the chocolate is a thick cream, remove from heat.
- Whip the egg whites until they form a firm snow.
- Add chocolate to egg yolk mixture.
- Gently cut and fold the egg whites into the mixture and turn it into the prepared tin or case.
- Bake in preheated oven for 10 to 15 minutes or until firm when touched.
- Wet a clean cloth in cold water and wring out.
- Remove roulade from oven, allow to cool slightly, then cover with cloth (this will prevent any sugary crust from forming).
- Leave in a cool place for 12 hours or in a fridge overnight.
- Whip the cream and flavour to taste with the essence.
- Lay a piece of greaseproof paper on a flat surface.
- Dust well with icing sugar.
- Remove cloth and turn roulade upside down on the prepared paper.
- Carefully remove paper from roulade.
- Spread with the whipped cream.
- Roll up like a swiss roll.
- Place on a serving dish and dust well with icing sugar.
- How to make a roulade case:.
- Use thick greaseproof paper or nonstick kitchen paper.
- It should be 1 1/2 inches longer and wider than the pan you are using.
- Fold a 1 1/2 inch border on all 4 sides.
- Cut a slit at each corner and fold one cut piece over the other to miter the corners.
- Use paperclips to secure the corners.
- Slide the case onto a baking sheet.
- Lightly brush with oil, melted butter or melted shortening before use.

- Preheat oven to 400 degrees F (200 degrees C).
- Place each chicken breast half between sheets of plastic wrap and pound with a meat mallet to about 1/8 inch thickness. Place a finger of cheese on each ham slice and sprinkle lightly with thyme and salt and pepper to taste. Roll up seasoned ham and cheese 'jellyroll-style', then roll each chicken breast with ham and cheese inside. Tuck in ends and fasten with toothpicks.

- Lay down cutlet of chicken and put a slice of ham and a slice of cheese on top and roll it up, sealing it with 2 toothpicks. Dip it in milk bath and then roll it in flour. - Preheat oven to 350 degrees F (175 degrees C). Coat a 7x11 inch baking dish with nonstick cooking spray.
- Pound chicken breasts to 1/4 inch thickness.

- In a medium size bowl, combine the chicken, ham and cheese pieces and stir to mix thoroughly. Separate the spring roll wrappers and set aside. Beat the egg in a small bowl and set aside as well.
- Place a single wrapper on a large plate and scoop a heaping tablespoon of the mixture into the center of it. Roll from the corner in and fold in the sides as you go. Dip a finger in the beaten egg and seal the edge with egg. Set aside on a clean plate. Repeat until all of the egg rolls have been made.
- FRYING INSTRUCTIONS: In a heavy weight sauce pan, heat the oil. For my stove, medium high works best. The oil should never be hot enough to smoke, but it should be hot enough to sizzle when you place an egg roll in the oil. Cook the egg rolls in batches, turning them as needed in the shallow oil. Remove the egg rolls using your tongs and set aside to drain slightly on a wire rack over a pan or on a paper towel lined plate.
- BAKING INSTRUCTIONS: Preheat oven to 425 degrees. Place the rolls on a silicone lined baking sheet (or grease the metal baking sheet). Brush the rolls lightly with oil and then place in the oven. Turn the rolls over after 10 minutes cooking and bake about 5 minutes more, or until they are golden brown.
