CRANBERRIES IN THE SUN

Entered for safe-keeping. From Mr. Ken Jernigan, Titusville, Florida, as submitted to BH&G. What imagination to combine rice, mandarin oranges, and whipping cream, and then top it off with a cranberry sauce!

Steps:

  • Drain mandarin oranges, reserving 1 tablespoon liquid.
  • Whip cream; fold in rice, orange peel, and mandarin oranges. Chill.
  • In small saucepan, break up cranberry sauce; stir in sugar, cornstarch, lemon juice, and reserved mandarin orange syrup. Cook and stir until mixture is thickened and bubbly.
  • Cool sauce to room temperature.
  • Spoon mounds of rice mixture on lettuce leaves.
  • Halve orange slices and arrange around mounds.
  • Spoon cranberry sauce on top.

1/2 cup whipping cream
1 cup cooked rice
1/4 teaspoon orange peel, shredded
8 ounces jellied cranberry sauce (1 cup)
1 tablespoon sugar
1 teaspoon cornstarch
1 tablespoon lemon juice
1 large orange, peeled and sliced 1/4 inch thick
4 -8 lettuce leaves

Steps:

  • Soak the gelatine leaves in cold water. Drain, squeeze and dissolve the soaked gelatine in the hot water from the kettle. Add to the warm, smooth-style orange juice and set aside. Repeat the process using warm cranberry juice. Pour half of the orange juice into a large jelly mould and chill in the fridge until set completely - about 4 hours. Cover the orange jelly with half the cranberry juice and chill to set. Repeat the process until both juices are used. Leave to set overnight.
