CREAM CHEESE BARS I

This cookie has a chewy bottom crust with a sweet cream cheese layer on top. I like this best with a yellow or lemon cake mix.

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 15 x 10 inch sheet pan.
  • Mix together cake mix, butter or margarine, and 1 egg. Press mixture into pan.
  • In a small bowl, mix together cream cheese, 2 eggs, and confectioners' sugar. Pour mixture on top of cake mixture.
  • Bake for 15 minutes. Reduce temperature to 300 degrees F (150 degrees C), and bake for 30 to 35 minutes. Cool, and cut into squares.

Steps:

  • Preheat oven to 350*.
  • Combine oats, flour, brown sugar, and 1/4 cup of granulated sugar and mix well. Add Crisco and cut in until it's crumbly. Set aside 1 cup of this mixture and press remainder into a sprayed 9x13 pan.
  • Bake for 12 minutes, cool slightly.
  • In a mixer bowl, combine cream cheese, eggs, 1/2 cup of sugar, and vanilla. Mix til smooth and spread evenly over oat crust.
  • Combine apple, raisins (if desired) and almond extract. Stir.
  • Add spices and 2 T. of sugar and sprinkle over cheese mixture.
  • Return to oven and bake an additional 25 minutes or til golden. Cool completely and cut into bars.

  • Swirl the sesame seeds in a small nonstick skillet over medium heat until they begin to brown and toast, 3 to 4 minutes. Transfer to a small bowl; set aside.
  • Stir together the cream cheese, hot-pepper paste and 1 tablespoon water with a rubber spatula in another small bowl until combined. Refrigerate until ready to use.
  • Bring the chicken broth, oats, 1 cup water and a pinch of salt, if using, to a simmer in a small saucepan over medium-high heat and cook, stirring frequently, until the oats soften and breakdown and the mixture is the consistency of a loose porridge, 15 to 20 minutes. Pour into a cereal bowl, cover and keep warm.
  • Generously spray the skillet with cooking spray, and set over medium-high heat. Crack the egg into a mug or small bowl, and carefully slide it into the hot skillet. Cook until the white is set and brown and crispy on the bottom and edges and the yolk is still runny, 2 to 3 minutes.
  • Use a spatula to help slide the egg on top of the oatmeal. Then arrange neat piles of the cream cheese-pepper sauce, scallions and nori on top of the oatmeal. Sprinkle with the toasted sesame seeds. Then take a photo!

  • For the oatmeal pies: Preheat the oven to 325 degrees F and line 2 sheet pans with silicone mats or parchment paper.
  • Combine the oats, flour, salt and baking soda in a medium bowl and set aside. In the bowl of a stand mixer fitted with the paddle, cream together the butter and brown sugar until creamy and light, 2 to 3 minutes. Add the egg, molasses and vanilla extract and whip together until fully combined, about 30 seconds. Add the dry ingredients and mix until just incorporated. Mix in the chocolate chips. Portion the dough into 16 balls that are about 3 heaping tablespoons each and space an inch apart on the sheet pans. Bake until the edges are golden but the centers are still soft and slightly underset, begin checking at 12 minutes. Allow to cool on the pans, about 15 minutes, then cool completely on a rack.
  • For the filling: Cream together the cream cheese, butter and coconut oil in a stand mixer fitted with the paddle attachment until smooth and light, 30 seconds to 1 minute. Add the powdered sugar, salt and vanilla extract and whip until light and fluffy, 2 to 3 minutes.

Strawberry Oatmeal Breakfast Bars image

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Butter a 9x12-inch baking dish.
  • Remove the green tops from strawberries using the tip of small, sharp knife or strawberry huller. Place the berries cut-side down on a work surface and cut in half. Slice each half lengthwise 3 to 5 times before turning and cutting across in a nice, uniform dice.
