Creamy Avocado Dressing image

Steps:

  • Combine avocado, yogurt, scallions, and lime juice with 1/2 cup water in a blender; puree until smooth. (Add more water, by the tablespoon, to adjust consistency as needed.) Season with salt. Dressing can be stored in refrigerator up to 3 days; stir until smooth before serving.

Creamy Avocado Vinaigrette image

Steps:

  • Pour avocado oil, olive oil, vinegar, lemon juice, and sesame oil into a blender. Cover and blend until smooth and emulsified, about 2 minutes. Add avocado; blend well to combine, about 2 minutes. Add garlic and cumin; blend until vinaigrette flavors are combined, about 1 minute. Season with salt and pepper.
  • Transfer vinaigrette to a container; chill in the refrigerator for 1 hour. Shake well before using.

  • Puree all ingredients together well, adding sake or other dry white wine to the desired consistency, then chill for at least 1 hour.
  • Serve as dressing.
  • Also good with crab cakes!
  • Note: make sure to use a fully ripe avocado for this recipe! It needs to be ripe and rich - Californian (Haas or Gwen) avocados have a buttery and richer flavor than avocados from Florida or other areas. Otherwise your dressing will come out tasting a little flat.

2 tablespoons hot wasabi
