SAUTEED SHRIMP WITH GARLIC, LEMON, AND WHITE WINE
Steps:
- Place 1/4 cup oil, scallion whites, garlic, and oregano in a large skillet or wok over medium heat. Cook, stirring often, until the oil starts to simmer, about 5 minutes. Add shrimp and increase heat to high. Cook, stirring and turning often, until opaque, 4 to 5 minutes.
- Add lemon juice and wine to the skillet; simmer for about 1 1/2 minutes. Add water, pepper, and salt; cook for 30 seconds. Stir in butter, 1 tablespoon olive oil, scallion greens, and parsley until even distributed. Arrange the shrimp on warmed plates and spoon the sauce on top.

CREAMY DREAMY SHRIMP SAUTE
I've made this a few times now and it's always quick and surprisingly satisfying for a reduced-fat entree. I keep frozen cooked shrimp on hand as a staple for a last-minute but gourmet dinner. They defrost in a matter of minutes, so I don't take them out of my freezer until I'm ready to start cooking. I put the shrimp in a colander, run tepid water over them for a minute or so, and after they sit about five minutes, I can pull the tail shell off, and they're ready to heat up! Serve over pasta or rice.

Steps:
- In a large deep skillet, sauté onion and celery in the oil for approximately five minutes, so that celery is still crisp.
- Add soup, water, and garlic, stirring to mix everything.
- Bring to a boil.
- Add thawed vegetables and return to low boil for 2 to 3 minutes. Taste and adjust seasonings.
- Add shrimp, stir, and cook just until heated through, 1 - 2 minutes. Serve over pasta or rice, and top with fresh grated parmesan. Yummm!

- In a small saucepan, melt butter; stir in flour until smooth. Gradually add broth and garlic. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat. Stir in the cream, parsley, paprika, salt and pepper., Butterfly shrimp, by cutting lengthwise almost in half, but leaving shrimp attached at opposite side. Spread to butterfly. Place cut side down in a greased 13-in. x 9-in. baking dish. Pour cream sauce over shrimp. Bake, uncovered, at 400° for 15-18 minutes or until shrimp turn pink. Serve with noodles or rice.

- 1. PREP/PREPARE
- 2. Gather your ingredients.
- 3. Add the bacon to a large sauté pan over medium heat.
- 4. Cook until beginning to brown.
- 5. Add the sun-dried tomatoes, basil, and garlic to the pan.
- 6. Sauté until the garlic is fragrant, about 1 minute.
- 7. Add the shrimp, a pinch of salt, and the paprika, to the pan.
- 8. Stir and sauté for an additional 2 minutes.
- 9. Add the half & half, and crushed red pepper to the pan.
- 10. Bring up to a simmer.
- 11. Add the softened cream cheese, and Parmesan.
- 12. Stir until the cheese is melted.
- 13. Chef's Note: If the sauce is still too thick, add half & half a bit at a time, until the desired consistency is achieved.
- 14. PLATE/PRESENT
- 15. Plate with some good pasta. Enjoy.
