ZUCCHINI PORK PENNE

This easy pasta recipe is a nice change from the regular ones. The combination of zucchini and pork is deliciously different!

Zucchini Pork Penne image

Steps:

  • 1. Cook pasta according to package directions.
  • 2. In a large skillet over medium, heat oil. Add onion and sauté for 3 minutes. Add red pepper and cook for another 3 minutes. Add garlic and sauté for 1 minute. Add pork and cook until no longer pink. Add red wine and cook it down until liquid has almost evaporated. Add diced tomatoes, tomato sauce, oregano, Italian seasoning, paprika, basil, rosemary, garlic salt and brown sugar; stir to combine. Reduce heat down to medium-low and cook for 10 to 15 minutes or until flavor blended.
  • 3. Drain pasta and add to skillet. Add zucchini and sprinkle freshly ground black pepper and more garlic salt. Increase heat to medium, cover and cook until zucchini is tender, about 5 to 8 minutes. Add cheese and stir until melted. Remove from heat and sprinkle fresh parsley over. Serve immediately.

2 1/2 c uncooked penne pasta
1 Tbsp olive oil
1/2 c red onions, chopped
1/2 c red peppers, chopped
1 large clove garlic, pressed
1 lb lean ground pork
1/4 c dry red wine
1 can(s) (14.5 oz.) diced tomatoes
1 can(s) (13.5 oz.) tomato sauce (substitute with marinara sauce)
1 tsp dried oregano leaves
1 tsp italian seasoning
1 tsp smoked paprika
1 tsp dried basil leaves
1 tsp dried rosemary, chopped
1 tsp garlic salt, or more to taste (optional)
2 Tbsp brown sugar, such as demerara
1 medium zucchini, cut into 1/4-inch slices
freshly ground black pepper, to taste (i always use mixed peppercorns)
1/4 tsp red pepper flakes, or to taste
1/4 c monterey jack jalapeño cheese, grated
2 Tbsp fresh parsley, chopped

Sauteed Zucchini with Feta image

Steps:

  • In a 12-inch skillet, heat the oil on low. Slowly saute the zucchini and garlic, with a little salt, until golden and slightly caramelized, about 20 minutes. Season with salt and pepper. Mix in parsley or basil, cilantro and feta.

2 tablespoons olive oil
2 large zucchini, thinly sliced in rounds
2 garlic cloves, chopped
Salt and pepper, to taste
1/4 cup chopped parsley or basil
1 tablespoon chopped cilantro
1/2 cup crumbled feta

PORK WITH GARLIC CREAM SAUCE

This is a recipe I received from a caterer in town. She served this unique dish at an event and everyone really enjoyed it. It is pork tenderloin sliced thin and broiled for 3-5 minutes on each side. The pork slices are topped with a cream cheese based sauce that is really a delicious twist. I have made this at home several times. The sesame seeds in the recipe are optional. I have had the dish with and without them and it is great either way.

Pork With Garlic Cream Sauce image

Steps:

  • Cut pork into 1 inch slices and flatten to 1/2 thickness.
  • Place sliced pork on a greased/oiled baking sheet. Brush oil over top of sliced pork. Sprinkle sliced pork with 1 teaspoon sesame seeds (optional).
  • Broil 4-6 inches from the heat for 3-5 minutes; turn and sprinkle remaining sesame seeds (optional). Broil 3-5 minutes longer or until meat juices run clear.
  • Meanwhile, in a saucepan, saute garlic in butter for 1 minute. Stir in milk and cream cheese. Reduce heat; cook and stir until blended and smooth. Stir in chives. Serve over pork.
  • Great accompanied with buttered noodles or roasted potatoes.

Steps:

  • Cook the pasta according to the package directions, omitting salt or fat.
  • While the pasta cooks, heat the oil in a large skillet over medium-high heat.
  • Add the oregano, zucchini and crushed garlic; saute 3 minutes.
  • Stir in the broth, rind, juice and pepper.
  • Add the pasta and cheese; toss well.
  • Serve immediately.
