CREAMY HASH BROWNS AKA "EVIL POTATOES"
The chef at The Captain Lord Mansion, a bed and breakfast in Kennebunkport, Maine served this side dish at breakfast one morning and was kind enough to share the recipe with our group. I also think it would be great with ham or roast beef as a side dish. The chef also told us that he had used the same "sauce" ingredients with cooked elbow macaroni and cubed ham, baking it for about 30 minutes.

Steps:
- Mix all ingredients together except for the onion rings.
- Pour into a 9 X 13 baking dish that has been sprayed with cooking spray.
- Bake at 350 degrees for 50 minutes.
- Remove from oven and sprinkle with the crushed onion rings.
- Return to oven and bake an additional 5 to 8 minutes, or until onion rings are slightly browned and heated through.

Steps:
- Rinse shredded potatoes until water is clear, then drain and squeeze dry. Place shreds in a bowl, and mix in the onion, flour and egg until evenly distributed.
- Heat about 1/4 inch of oil in a large heavy skillet over medium-high heat. When oil is sizzling hot, place potatoes into the pan in a 1/2 inch thick layer. Cover the whole bottom of the pan, or make separate piles like pancakes. Cook until nicely browned on the bottom, then flip over and brown on the other side. It should take at least 5 minutes per side. If you are cooking them in one big piece, it can be cut into quarters for easier flipping.
- Remove from pan, and drain on paper towels. Season with salt and pepper and serve immediately.

- Put the potatoes and onion in a cloth and wring out the moisture.
- Lightly mix in the rest of the ingredients.
- Use a heavy bottomed frying pan for cooking the potato mix.
- When oil is hot put in tablespoons of mixture, pressing down a little for more contact with hot pan.
- These look better if a little lacy.
- When golden turn and cook the other side.
- Keep cooked ones in a warm oven.

- In a large saucepan of simmering salted water, cook the potatoes until tender, about 30 to 35 minutes. Drain well, return to the saucepan, and shake over medium heat until they are dry. Remove from the heat and when they are cool enough to handle, peel them, and cut into 1/2-inch dice.
- In a large bowl, toss the potatoes, onion, scallions, salt and pepper together.
- In a large skillet, preferably nonstick, cook the bacon over medium heat until crisp, about 10 minutes. Reserving the fat in the skillet, drain the bacon on paper towels; crumble and set aside.
- Add the butter (if you are not using a nonstick skillet, it may be necessary to add more butter to keep the potatoes from sticking) to the bacon fat and heat over medium-high heat, Add the potato mixture and press firmly into the pan with a spatula. Cook, flipping frequently, until the potatoes brown, 10 to 15 minutes.
- Serve hot with crumbled bacon on top.
