CRISPY RESTAURANT-STYLE HASH BROWNS
These hash brown potatoes will beat restaurant hash browns hands down. I like to cook them very crisp and well done. I usually make one large pan-sized hash brown so I just have to flip once in the hot oil. These potatoes are superior to frozen or restaurant hash browns. I saw a similar recipe online and wanted to have a written copy for the kitchen so I did not have to watch the video each time I made these.

- Rinse shredded potatoes in a colander with cold water until water runs clear. Place in a cheesecloth or clean dish towel and twist tightly to squeeze out all moisture.
- Place potatoes in a bowl with onion, flour, salt, and pepper. Add egg and mix thoroughly.
- Heat oil in a shallow, cast iron frying pan. Add potato mixture to the hot oil to form either on large or several smaller pancakes. Cook until browned and crispy, about 5 minutes per side. Drain on a paper towel and serve hot.

CREAMY SOUTHWESTERN HASH BROWN SOUP
I was looking for a different way to use some hash browns that needed using. Saw a couple recipes...this is my take on it...because I had Simply Hash Browns Southwestern i decided on a mexican styled soup. I also think this could easily be made in the crockpot...I will try it next time and edit how it went. **Please also note that this is spicy! If you would like a less spicer soup I would recommend using diced tomatoes with green chilies and Taco seasoning packet that is regular not hot and spicy. Although this soup should cook at least 1 1/2 hours...the longer the better! This soup tastes even better the next day. I think it's good...what do you think? ;)

Steps:
- In a large stockpot add small amount of olive oil, onion, garlic, pepper to taste and saute lightly.
- Add Hash browns a cook for a few minutes, stirring so as not to brown too much.
- Add Chicken broth and come to boil.
- Turn down heat and add cheese, stirring until melted.
- Add the rest of the ingredients and simmer at least 1 1/2 hours.
- If the soup is too thick for your liking you can thin it out with either more chicken broth or milk. We like ours nice and thick!
- Optional Toppings:.

- Cheddar Cheese.
- Diced Green Onions, chopped.
- Tortilla Chips.

- Rinse shredded potatoes until water is clear, then drain and squeeze dry. Place shreds in a bowl, and mix in the onion, flour and egg until evenly distributed.
- Heat about 1/4 inch of oil in a large heavy skillet over medium-high heat. When oil is sizzling hot, place potatoes into the pan in a 1/2 inch thick layer. Cover the whole bottom of the pan, or make separate piles like pancakes. Cook until nicely browned on the bottom, then flip over and brown on the other side. It should take at least 5 minutes per side. If you are cooking them in one big piece, it can be cut into quarters for easier flipping.
- Remove from pan, and drain on paper towels. Season with salt and pepper and serve immediately.

- Place potatoes in a large saucepan and cover with cold water. Place on stove over medium-high heat. When water is boiling rapidly, turn off heat, cover pot, and let potatoes sit for 5 minutes. Carefully drain water and cool potatoes. You can refrigerate them, which will take a little while, or run them under cold water for 5-10 minutes (my preferred method).
- Shred potatoes, set aside.
- Heat large skillet over medium heat. Add chopped bacon. Cook for 2-3 minutes. Add onions. Cook until bacon is cooked and onions are browned, stirring occasionally, 5-6 minutes.
- Add butter or margarine to skillet and let melt.
- Add shredded potatoes and stir until onions and bacon are evenly distributed among the potatoes. Flatten with the back of the spatula and let sit until bottom is browned, 4-5 minutes.
- Flip potatoes over. This does not need to be down perfectly. Cook another 4-5 minutes until potatoes are browned on both sides.
- Add sour cream, cheese, and pepper. Stir until mixed. Flatten potatoes with spatula and cook a few minutes, until browned. Flip. Cook another few minutes. Serve warm.
- Add additional cheese if desired.

- Preheat overn to 350. Placed shredded hashbrowns in large bowl and set aside.
- Bring cream and broth to simmer in small saucepan. Remove pan from heat and stir in garlic, butter, and Parmesan.
- Pour cream mixture into bowl with potatoes and stir to combine. Stir in salt and pepper.
- Scrape potato mixture into 2-qt. baking dish and sprinkle with cheddar cheese.
