CREAMY SAUSAGE GRAVY - CASSIES
We had my delicious sausage gravy and biscuits for dinner. They aren't just for breakfast at my house. My family would eat this anytime of day. Hope you try it.

Steps:
- I use my 12 inch iron skillet to make my gravy. If you don't have, use a heavy large skillet. Brown your sausage over medium heat, and break it up as it cooks to whatever size you prefer. Drain sausage and remove from pan. Reserve a couple tablespoons of grease in pan ( sometimes I add bacon grease. ) Sprinkle sausage with flour. Cook and stir for a couple minutes to thoroughly cook flour so it doesn't taste raw.
- Slowly add the milk and cream, stirring constantly. Add the seasonings. Slowly bring to a boil. Boil, stirring constantly, for about five minutes, until gravy is the right consistency. You may need to add additional milk if the gravy is too thick. Serve over biscuits or even homefries. I have used ground beef instead of sausage and served over toast, or mashed potatoes. You can easily halve this recipe if only making for a few. Also, use whatever spices you prefer. I sometimes add hot pepper flakes, hot sauce, garlic. Possibilities are endless... Enjoy!

Steps:
- Put the sausage in a large, straight-sided saute pan over medium-heat.
- As the sausage cooks, crumble into small pieces using a fork.
- When the sausage crumbles are lightly browned and fully cooked, transfer them and their pan juices to a bowl; set aside.
- Add the shortening to the hot pan.
- When the shortening has melted, add the flour, stirring it in slowly with a whisk.
- Stir constantly and cook the mixture until the flour is slightly browned (about 3-4 minutes).
- The mixture should smell nutty, not burned.
- Add in the milk, stirring constantly with a whisk until the gravy comes to a boil.
- Lower the heat to medium-low and simmer gently for 15 minutes.
- Add the reserved sausage and pan juices to the gravy.
- Mix well with a wooden spoon, seasoning to taste with salt and pepper.
- The gravy should be a medium-thick sauce; if needed, the gravy can be thinned by adding warm milk.
- Split the biscuits in half; place the halves, split side up on individual plates.
- Cover generously with warm gravy and serve immediately.
CREAMY COUNTRY SAUSAGE & GRAVY
The original version of this recipe was passed down from my Grandmother back in Missouri. I've made some improvements. I'll let you figure out what you want to put it on; biscuits are my favorite but this is great on just about anything you might want to put gravy on. I also use Jimmy Dean Sage Sausage and add a pinch of crushed red pepper flakes but those are entirely optional.

Steps:
- Cook sausage in a large skillet, breaking up into small pieces as it cooks.
- Once fully cooked, add butter and mix well until melted and mixed together.
- Add flour and mix together.
- Add milk 1/2 cup at a time, stirring well after each addition. Mixture will become very thick and then slowly thin out. If you add all of milk at once it will clump. Add it slowly so that it will be a smooth gravy. This is called making a roux.
- Once all milk is added add salt and pepper to taste.
- Serve over biscuits.

- In a large bowl, whisk the flour, salt and baking powder together until combined. This is homemade self-rising flour and is all you need, other than cream, to make the biscuits.
- Push the dry ingredients up against the sides of the bowl to form a hole for the heavy whipping cream to be poured into. Pour a CUP of the heavy whipping cream in, and stir with a rubber spatula in circular motions to pull the flour into the cream. Mix until the dough begins to pull away from the bowl. (If the mixture still has lots of flour remaining, pour in the reserved 1/4 cup of heavy whipping cream in tablespoon by tablespoon until all the flour has been incorporated into the dough. You don’t want your dough to be too wet, so it's important to do incrementally. Also, please try not to overmix your dough.)

- Set a large skillet (I love cast iron) over medium heat. Add in the sausage and with a wooden spatula break up sausage into smaller pieces while stirring. Cook until brown and fully done (about 8 to 10 minutes).
- Sprinkle flour, garlic, and pepper on top of the sausage and slowly stir until well coated and grease is full absorbed. Continue stirring and let the flour cook fully for about 2 minutes.
- While stirring, slowly pour in 3 cups of the milk. Continue to stir and simmer until gravy thickens (3 to 5 minutes). Add salt, if needed. If gravy is too thick, add the last 1/2 cup of milk.
