It only takes a minute to make up a tall, cold glass of this refreshing, hot-weather drink. You've probably got all the ingredients on hand. While its best if you thought ahead to make some double-strong coffee, that last mugfull that got cold in the pot will do. ;) (I confess, I can't afford to use real vanilla all the time. The artificial kind works just fine in this for my tastes).

Vanilla Iced Coffee -- Simple and Easy image

Steps:

Fill a tall glass 2/3 full of ice.
Add cream, Splenda, and vanilla.
Add coffee and stir well.

8 -10 ounces double-strong coffee, cold (I prefer half-caf or half decaf and half dark roast)
1 -2 tablespoon milk or 1 -2 tablespoon cream, to taste
1 (1 g) packet Splenda sugar substitute, to taste (or more, or equivalent in preferred sweetener)
1/2 teaspoon vanilla extract

my son says this tastes like Tim Horton's Iced Cappuccino ---make certain to use a very strong brewed coffee for this, I use frozen mini coffee cubes for this in place of ice cubes --- the addition of chocolate syrup takes this to yet another level :)

Whisk in the half and half cream until well blended.

To a large pitcher add water and coarse ground coffee. Stir to mix the grounds in with the water. Cover and let coffee sit overnight or for 12 hours.
Then pour mixture through a coffee filter or cheesecloth to strain the grounds from the mixture, so you are left with a pure clean cold brewed coffee.
Next to a small bowl, add sweetened condensed milk, evaporated milk, vanilla extract and cinnamon. Whisk to combine everything and refrigerator.
