While I was growing up, my family spent time in Haiti, where we enjoyed eating many authentic dishes such as this. It's now a meal my husband requests often.

- In a large skillet over medium heat, saute the celery, green pepper and onion in oil until tender; Add garlic; cook 1 minute longer. Add flour; cook and stir for 5 minutes or until browned. , Stir in broth. Bring to a boil; cook and stir for 2 minutes. Add remaining ingredients except rice. Return to a boil. Reduce heat; cover and simmer for 10 minutes or until heated through. Serve with rice.

- In a 6-qt. slow cooker, combine the first 6 ingredients and 1-1/2 teaspoons Cajun seasoning., Sprinkle chicken with remaining Cajun seasoning. In a large skillet, heat oil over medium heat; brown chicken, about 5 minutes per side. Place in slow cooker., Cook, covered, on low until a thermometer inserted in chicken reads at least 170°-175°, 4-5 hours (rice will be saucy).

CREOLE BAKED CHICKEN

- Preheat oven to 350 degrees F.
- Place chicken in a baking pan or baking dish and squeeze lemon juice over. In a small bowl combine onion powder, thyme, ground rosemary, salt, and ground black pepper. Sprinkle over the chicken pieces, cover with foil and bake until the juices run clear and the flesh is fork tender, about 45 minutes to 1 hour. Remove foil during the last 10 to 15 minutes of baking time. Remove from oven and let rest.
- Make the creole sauce while the chicken is in the oven. Heat grapeseed oil over medium heat in a sauce pot. Saute shallots and garlic until shallots turn translucent, being careful not to burn the garlic. Stir in rosemary and thyme, add crushed tomatoes, season with salt and pepper, cover and let simmer for 15 minutes. Add grape tomatoes, red and yellow bell peppers, diced onion, cayenne, and Creole seasoning, and simmer for 15 minutes more. Remove from heat and whisk in butter.
- Remove chicken from oven, transfer to a platter and let rest. Spoon sauce over and sprinkle with minced parsley leaves.

- Sprinkle chicken with 1/4 teaspoon salt and pepper. In a large skillet over medium heat, brown chicken in oil; remove and set aside. - Lightly sprinkle the chicken legs with salt and pepper. Generously coat the chicken legs with the sour cream.
- Put crushed cornflake crumbs in a pie plate or shallow wide bowl and add the Creole seasoning and parsley. Roll the coated chicken pieces in the seasoned crumbs. Place coated chicken in the prepared baking dish. Lightly spray the drumsticks with the vegetable oil.

CREOLE STYLE CHICKEN LEG QUARTERS #5FIX
5-Ingredient Fix Contest Entry. Just got inspired to make this dish based on the main ingredient - Simply potatoes - shredded hash browns. Creole seasoning and baking times can vary a bit based on the size of the chicken leg quarters used in this recipe. I did not want to do a breakfast dish.

- Preheat oven to 350 degrees.
- From the top side of each chicken leg quarters, make a pocket by using your fingers to separate the skin. Keep the skin intact at the bottom of the thigh. Rub the chicken leg quarters inside and outside with 2 teaspoons of Creole seasoning.
- In a medium bowl, mix together the Simply Potatoes - Shredded Hash Browns with the beaten egg and cream cheese. Reserve one cup of this mixture.
- Divide the remaining mixture into 4 portions and stuff the pockets of each chicken leg quarters. Gently pull the skin over to cover the mixture.
- Place chicken on baking pan. Top each chicken leg quarters with the reserved potato mixture. Sprinkle the prepared chicken with remaining 1 tsp Creole seasoning.
- Bake in oven for 1 to 1 1/2 hour depending on size of chicken leg quarters. About 10 minutes before being done, brush the chicken with liquids from the pan. Continue baking for another 10 minutes.

- Spray the bottom of a large glass baking dish with butter flavor cooking spray.
- Add some creole seasoning to bottom of dish.
- Arrange chicken pieces in dish, add freshly ground black pepper to taste and sprinkle on top with more creole seasoning . (careful not to over do it, it would be to salty).
