Crispy Cheddar Chicken image

Steps:

  • Cut each chicken breast into 3 large chunks.
  • In a small food processor grind up the ritz crackers.
  • Pour the milk, cheese and cracker crumbs into 3 separate small pans. Toss the 1/4 t salt and 1/8 t pepper into the cracker crumbs and stir the mixture around to combine.
  • Dip each piece of chicken into the milk then the cheese and finally the cracker crumbs.
  • Spray a 9x13 pan with cooking spray and lay the chicken inside the pan.
  • Sprinkle the dried parsley over the chicken.
  • Cover the pan with tin foil and bake at 400 degrees for 35 minutes. Remove the tin foil, bake for an additional 10 minutes, or until the edges of the chicken are golden brown and crispy.
  • Into a medium sized sauce pan combine the cream of chicken soup, sour cream and butter with a whisk. Stir it over medium high heat until the sauce is nice and hot. Serve over the chicken.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine cheese, butter or margarine, flour, crispy rice cereal, salt, Worcestershire sauce, garlic powder, cayenne pepper, and black pepper. Mix well and form small balls out of the dough (the dough will yield approximately 55 balls). Flatten each ball of dough with your fingertips until the dough is very thin and arrange the discs on a cookie sheet.
  • Bake for 12 minutes; or until the Cheese Crispies are golden and slightly brown around the edges. Enjoy!

Steps:

  • Pound the chicken breasts so they are about 1/4-1/2 inch in thickness.
  • Take 16 Ritz crackers and crush them. Put them into a medium size bowl, add the minced garlic, sliced scallions or green onion tops, shredded cheese and the seasonings (salt and pepper). Mix everything together.
  • Take the flattened chicken breasts and cut each one into 2 or 3 pieces enough to make 2 pans worth.
  • Melt the 4 Tbsp. of butter in a microwave-safe bowl in the microwave. Dip each chicken piece into the melted butter, then dip the coated chicken piece into the cracker mixture, coating both sides. Lay aside until all chicken pieces have been coated.
  • Put the coated chicken pieces into freezer containers or bags.
  • Write on the container or bag: Crispy Cheddar Chicken, the date it was frozen and these instructions: Bake at 350° for 30-35 minutes Serve with any type of potato, rice or other vegetable.
