SLOW COOKER SALSA CHICKEN
This is one of my favorite recipes. Easy to make, healthy, and full of flavor. Just put all the ingredients in a slow cooker and let the machine do the work. There are infinite variations as to how to use the finished product, and your family is guaranteed to like each one.

Steps:
- Put chicken into the crock of a slow cooker. Sprinkle taco seasoning over the chicken. Layer diced tomatoes with habaneros, onion, celery, and carrot over the chicken, respectively; top with salsa. Pour water over the entire mixture.
- Cook on Low until the chicken is easily shreddable, 6 to 8 hours. An instant-read thermometer should read 165 degrees F (74 degrees C).
- Shred the chicken with 2 forks and stir with the salsa mixture.

EASY CROCK POT SALSA CHICKEN

Steps:
- Place first four ingredients in crock pot.
- Cook on low 6-8 hours.
- 30-60 minutes prior to serving, remove chicken, shred and return to crock pot.
- To serve, use chicken mixture as filling inside tortillas.
- Add desired condiments.

Steps:
- Combine the broth, salsa and flour in a slow cooker, whisking to blend, stir in onion.
- Arrange the chicken breast in the crock-pot; cover and cook on LOW for 6 hours.
- Remove the chicken breast to a plate; ladle sauce from pot into a blender and puree,(Or use Stick blender for easy clean-up), stir in sour cream.
- Return chicken and sauce to crock-pot; keep warm until ready to serve.
- Warm beans in a small pan on stove; warm tortillas in tortilla warmer in microwave.
- Arrange chicken on plates and top with shredded cheese; Serve with Beans, lettuce, additional salsa and tortillas.

- Cover the bottom of the pot with salsa.
- next mix canned soup with the rest of the salsa.
- place the chicken in the pot, add salsa -soup mixture.
- cover and cook on low for 6-8 hours
- fork shred or mash chicken pieces.
- add shredded , sour and cream cheeses.
- cook for an additional 1-2 hours.
- serve in tortillias or your choice rice, chips etc.

- season chicken on both sides with taco seasoning and put it in the crock pot.
- pour salsa over it.
- cook on low 7-8 hours.
- shred chicken in the crock with a fork and stir in the corn, beans and sour cream.
- cook 30 more minutes.
- serve in tortillas, over rice, over chips, salad, or use in your favorite mexican recipe!
MEXICAN SALSA CHICKEN
I got this recipe from my sister about 15yrs ago...my sister doesn't really love to cook & doesn't try a lot of new or 'different' dishes, and follows a recipe to the 'T'..unlike myself.....originally it was made in a crock pot and then baked. But I found the 2 step process to be to time consuming as well as creating more dirty dishes (ugh)...I have changed it up a bit to my familys tastes ....I serve with rice and corn and a nice tossed salad. enjoy :)
