ESCOVITCH-STYLE MAHI-MAHI SANDWICH WITH MANGO AIOLI

Escovitch-Style Mahi-Mahi Sandwich with Mango Aioli image

Steps:

  • In a pot, heat the butter until melted. Turn off the heat and add the salt, chili powder, paprika, pepper, onion powder, granulated garlic, dried thyme, oregano and cayenne and allow the spices to bloom. (Alternatively, combine all the spices and the butter in a microwave-safe bowl. Cover with a wet paper towel and microwave on high for 45 seconds. Whisk together and let cool completely.)
  • Heat a grill to medium high and cover.
  • Coat both sides of the fish with the blackening spice/butter mixture.
  • Clean the grill grates very well and coat with vegetable oil and nonstick spray for that super nonstick double coverage.
  • Grill the fish on high, uncovered, until the internal temperature registers 130 to 135 degrees F, 3 to 4 minutes a side. Do not move the fish prematurely or it will stick. Only use a thin, metal fish spatula to flip.
  • Put a piece of fish on each bottom bun and top with Pickled Escovitch Peppers and shredded lettuce. Add a schmear of Mango Aioli on the top buns, close and eat!
  • Combine the vinegar, sugar, honey, thyme, tarragon and some salt in a small saucepan and bring to a boil. Turn off the heat and add the peppers and onion. Let cool to room temperature.
  • Mix together the mayonnaise, mango chutney and lime zest and juice in a bowl. Season with salt and pepper.

4 tablespoons butter
1 tablespoon kosher salt
1 teaspoon chili powder
1 teaspoon paprika
1 teaspoon freshly ground black pepper
1 teaspoon onion powder
1 teaspoon granulated garlic
1 teaspoon dried thyme
1 teaspoon dried oregano
1/2 teaspoon cayenne
4 mahi-mahi fillets (4 to 6 ounces each), skin removed
Vegetable oil, for the grill grates
Nonstick cooking spray, for the grill grates
4 large Hawaiian rolls, buttered and griddled
Pickled Escovitch Peppers, recipe follows
2 cups shredded iceberg lettuce
Mango Aioli, recipe follows
1 1/2 cups apple cider vinegar
1/3 cup granulated sugar
1 tablespoon honey
2 sprigs fresh thyme
1 sprig fresh tarragon
Kosher salt
1 red bell pepper, julienned
1 yellow bell pepper, julienned
1 jalapeño pepper, julienned
1/2 onion, thinly sliced
1 cup mayonnaise
1/4 cup mango chutney
Zest and juice from 1 lime
Kosher salt and freshly ground black pepper

Jumbo Lump Crab Cakes-Annette's image

Steps:

  • 1. Gather all your ingredients ahead of time to make things easier on yourself.
  • 2. In a medium bowl, combine the egg, mayonnaise, mustard, Worcestershire, Tabasco, lemon juice, Old Bay, salt and pepper. Mix so that all the ingredients are well-incorporated.
  • 3. Add the cracker crumbs and parsley and mix well.
  • 4. Gently fold in crabmeat until just combined (try not to break up lumps of crabmeat).
  • 5. Using wet hands, shape mixture into 6 patties---8 patties if you like them smaller (do not pack too firmly; cakes should be as loose as possible and still hold their shape).
  • 6. Put the crab cakes on a large platter or cookie sheet as they're shaped. Cover with foil and refrigerate at least 1 hour before cooking.
  • 7. Set oven on Broil ( or around 450 ) and place crab cakes a non stick sprayed cookie sheet. Put crab cakes in oven on medium height rack.
  • 8. After 3 minutes of initial cooking time open oven to check crab cakes, if golden brown turn over using a spatula and your hands. Cook an additional 2-3 minutes or until golden brown. (Every oven varies so cooking time will vary. You will know to turn when they are golden brown)

THESE CRAB CAKES ARE TOPPED WITH MY CURRY MANGO AIOLI. IT IS ALSO POSTED HERE ON JAP AS WELL. THESE TRULY AREN'T THE SAME WITHOUT IT!
1 large egg
2 heaping Tbsp mayonnaise
2 tsp dijon mustard
1/2 Tbsp worcestershire sauce
1 tsp tabasco sauce
1/4 tsp lemon juice, fresh
1 pkg ritz crackers, crushed ( you may not need this many if crab meat pieces aren't huge, use your judgement)
1 lb jumbo lump crab meat
2 tsp old bay seasoning
2 Tbsp fresh parsley, chopped
1/4 tsp salt
1/4 tsp pepper

Curried Mango - Trinidad image

Steps:

  • Cut mango lengthwise through the seed into 6 or eight pieces.
  • Discard inner part of seed. Wash and set aside.
  • Mix curry powder in 1/2 cup water to make a paste.
  • Heat oil in heavy pot, add curry paste and cook stirring constantly over low heat for a minute.
  • Add mangoes and stir to coat with curry.
  • Add remaining water, garlic, salt sugar and hot pepper.
  • Lower heat, cover and cook until mangoes are tender and liquid has evaporated, add more water if needed.
  • Taste mango and add more sugar if mangoes are too tart.
  • Sprinkle with anchar massala and stir well.
  • Remove from the heat.
  • Adjust salt and pepper.

4 -5 green mangoes
2 tablespoons trinidadian curry powder
1 cup water
1 tablespoon vegetable oil
2 garlic cloves, shredded
1 teaspoon salt
2 tablespoons sugar
hot pepper (optional) or west indian pepper sauce (optional)
2 teaspoons massala mixed spice (preferably anchar massala but garam massala will work as well)

SPICY CURRY AIOLI

This is another variation of my basic aioli recipe. While we enjoy this on just about everything, this aioli does well with kabobs and grilled foods... If you enjoy this, please also try my spicy chili and saffron aioli recipes for a different twist... A couple of notes with respect to ingredients. Please consider using Hellman's original mayonnaise when making this recipe - avoid using Kraft, Miracle Whip, and sweet mayonnaises at all costs. If you use a low fat mayo, I also recommend Hellman's. Another important note, this recipe is designed for asian-style madras curry powder. There are as many different types of curries as there are cuisines (maybe even more). My favorite is found at the asian market and is the staple ingredient for Vietnamese and some Thai yellow curries. Although Madras is a city in India and can lay claim to the name, even Indian Madras curry powder tastes very different than the one found in Viet/Thai markets. Spicy Curry Aioli image

Steps:

  • Combine mayonnaise, and lemon juice with a wire whisk, mixing together until uniform.
  • Add pressed garlic and curry powder and continue to mix once again until uniform in texture.
  • Serve aioli in a small ramekin, bowl, or directly on top of food and garnish with a sprinkle of cayenne pepper. Serve cool to slightly below room temperature.
