BUTTERNUT SQUASH & LEEKS

I found the basic recipe in a magazine, don't know which one. This is a tasty recipe, and really quite simple. The hardest part is the peeling of the squash.

Steps:

  • Preheat oven to 400.
  • Original recipe called for 400 - I think, like the one reviewer mentioned - may be too high. Maybe 375? Another thought is to maybe add the leeks a little into the cookiing -- the squash is definatly going to take longer to cook. Just some tweaking going on here. thanks for looking, and cooking!
  • In a large bowl, mix the squash, leeks, herb, salt, pepper, olive oil and pecans (if your are using them) together.
  • Place on a cookie sheet (may take 2) and cook for appx 1/2 hour.
  • This is some really good stuff!
  • Cook time is 1/2 hour, prep time is going to vary - the squash does take time, but well worth it.
  • Edit to add that after peeling, seeding and halving/quartering the squash, put it in the microwave for 2 to 3 minutes. This will help with dicing of the squash and help even out the cooking time with the leeks.

1 (2 1/2 lb) butternut squash, peeled, seeded & cubed
4 large leeks, white and light green parts
4 leaves fresh rosemary (substitute sage or any of your favorite holiday herb)
coarse salt
coarse black pepper
1/4 cup olive oil
roasted pecan pieces, for a twist

CURRIED MUSSELS

This is a spicy curried dish that my English husband loves! Great as an appetizer or as a main dish. For less spicy/hot, reduce ginger and/or curry paste. Serve with your favorite crusty bread for dipping.

Steps:

  • Heat coconut oil in a pan over medium-high heat. Saute onion in the hot oil until softened, 4 to 5 minutes. Add ginger, green curry paste, lemon zest, and garlic. Stir in coconut milk, fish sauce, water, and lime juice. Bring to a vigorous simmer.
  • Place mussels in a steamer above simmering sauce; cook until mussels open, 4 to 5 minutes. Remove mussels from heat and place into a large serving bowl.
  • Place cilantro into the sauce mixture and cook just until it turns bright green, 30 to 60 seconds. Pour sauce over mussels and serve.

  • Keep the mussels refrigerated until you’re ready to use. Once ready, place them in a large bowl of ice cold water. Scrub the outsides of the mussels and remove the string (or “beard”) by using a towel or paper towel to pull it out. Discard any mussels that have opened already. Keep the mussels in the ice water.
  • Heat a large skillet or wok over medium heat and add the butter and olive oil. Once it’s melted, stir in the onions, garlic, salt and pepper. Stir and cook for 5 minutes, until slightly softened. Stir in the curry paste and continue to stir until it’s distributed throughout the entire pan of onions. Cook for 5 more minutes. Stir in the coconut milk and stock, stirring until it’s smooth. Bring the mixture to a simmer, stirring continuously. Reduce the heat to medium low. Add the mussels and toss. Cover the skillet and cook just until the mussels open, about 5 to 6 minutes. Garnish with the sliced green onions. Stir the mussels well so the broth makes it into the shells. Serve immediately with baguettes or thin fries.

  • Clean leeks to ensure no sand is present. Cut in half, finely chop, white parts only. Chop garlic and set aside.
  • In a large deep pan, add oil, turn to medium heat. Add leeks and 1/2 tsp sea salt, saute for about 7-10 minutes, make sure to move them around often so they don't burn. Then add garlic and move around for about 2 minutes.
  • Now add in the curry paste, if you like it spicier add in a full tbsp, if not then use amount in recipe. Make sure everything is well combined, then add in the 2 cans of coconut milk. Add the other 1/2 tsp sea salt. Mix around and let simmer on low while you clean your mussels.
  • Debeard the mussels by pulling the beards located in the narrow part of the mussels. Rinse them well and drain. Add into the sauce, mix around and cover with the lid for about 3 minutes or until all mussels are open. If any didn't open, discard those, this will not affect your dish at all, so don't be afraid of that.
