GRILLED BRATWURST WITH BRIE AND SPIRAL APPLE SLAW

Grilled Bratwurst with Brie and Spiral Apple Slaw image

Steps:

  • For the bratwurst: Prepare a gas grill for medium-high heat. Grill the bratwurst until cooked through (160 degrees F on an instant-read thermometer), turning once, 20 to 25 minutes.
  • For the slaw: Meanwhile, in a large bowl, whisk together the vinegar, honey, mustard, dill, 1/2 teaspoon salt and a generous grinding of black pepper. Whisk in the olive oil to make a dressing.
  • With a spiral slicer, cut the apples and carrot into spirals; add to the dressing. Add the scallions and toss well. Refrigerate the slaw until ready to serve.
  • When the brats are nearly finished cooking, brush the cut sides of the pretzel buns lightly with melted butter and grill, cut-side down, on the upper shelf until crisp at the edges, 1 to 2 minutes. Turn the buns cut-side up and top with the sliced brie; grill until the brie just begins to melt, about 1 minute.
  • Serve the bratwurst on the buns, topped with slaw. Serve any extra slaw on the side.

4 bratwurst, about 4 ounces each
4 pretzel hotdog buns, split
Melted butter, for brushing
6 ounces Brie, thinly sliced
2 tablespoons cider vinegar
1 tablespoon honey
2 teaspoons grainy mustard
1/2 teaspoon dried dill
Kosher salt and freshly ground black pepper
3 tablespoons extra-virgin olive oil
2 crisp apples (like Fuji or Honeycrisp), unpeeled
1 extra-large carrot, peeled
3 scallions, thinly sliced

  • Place bratwurst and water in a skillet, cover and cook over medium heat for 10 minutes. Uncover; turn bratwurst and cook until browned and centers are no longer pink, 13-17 minutes longer. Remove and cool slightly. Cut into 1/2-in. thick slices; set aside., In the same skillet, heat oil over medium heat. Add onion; cook and stir until tender, 5-7 minutes. Add ketchup, broth, brown sugar, vinegar, curry powder and paprika. Bring to a boil; reduce heat. Simmer, uncovered, until slightly thickened, 8-10 minutes, stirring occasionally. Add sliced bratwurst; heat through. , Serve sausage mixture with french fries; sprinkle with additional curry powder.

QUICK & SIMPLE CURRY WURST (CURRYWURST) SAUCE FOR BRATS

My husband fell in love with curry wurst while stationed in Germany. This is the version we make at home to satisfy his cravings for it. It is a VERY simple recipe, but he loves it. We serve the sauce over grilled brats and it always goes over well. You can adjust the ketchup and curry amounts to suit your taste.

  • Heat the oil in a skillet over medium heat. Cook the onion in the hot oil until soft, but do not brown.
  • Combine the tomato paste, 3 tablespoons water, brown sugar, salt, cumin, mustard, cinnamon, cloves, and vinegar in a pot over medium heat; simmer 2 minutes; stir in the cooked onion. Mix together 1 tablespoon vegetable oil, curry powder, Hungarian paprika, ketchup, and 1 cup water in a bowl; stir into tomato paste mixture; simmer another 2 minutes.
  • Cook the bratwurst in a large skillet over medium heat until browned. Pour the sauce into the skillet with the bratwurst. Reduce heat to low and cook until sausages reach an internal temperature of 165 degrees F (75 degrees C), about 10 minutes.

Steps:

  • Preheat oven to Broil/Grill.
  • Pour tomato sauce into a large saucepan, then stir in the chili sauce, onion salt, sugar and pepper. Let simmer over medium heat, occasionally stirring; bring to a gentle boil and reduce heat to low. Simmer another 5 minutes.
  • Meanwhile, broil/grill kielbasa sausage for 3 to 4 minutes each side, or until cooked through. Slice into pieces 1/4 inch to 1/2 inch thick.
