DAD'S PERFECT PASTA SAUCE
This recipe reminds me of my dad. He was a great cook and would make a HUGE batch of this sauce and use it in everything. It does take a little time, but you will understand why once you have had it. Steps:
- 1. In a Crock pot or Dutch oven, cook meat, onion and garlic just enough to get slightly browned. Stir in crushed tomatoes, paste, sauce and water. Add in seasonings (sugar, basil, fennel seeds, italian seasoning, salt, pepper and parsley. Cover Crock pot or Dutch oven and simmer for 2 1/2 hrs if in Crock, about 1-1/2 hrs if in Dutch oven.
- 2. From here you can do as you wish with it. If storing product, let cool completely before transferring to a container to freeze or refrigerate.

- In a large saucepan, cook the sausage, onion and garlic in oil over medium heat until meat is no longer pink; drain. , Stir in the tomatoes, tomato paste, water, parsley, brown sugar, vinegar and seasonings. Bring to a boil. Reduce heat; simmer, uncovered, for 1-1/2 hours or until flavors are blended. Serve with pasta. Freeze option: Freeze cooled sauce in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little water if necessary.

DAD'S CROCK POT SPAGHETTI SAUCE

- Combine all ingredients in crock pot.
- Cook on high for 3-5 hours or low for 6-8 hours.

DADS SECRET SPAGHETTI SAUCE (AKA. LABCHEF)
Best spaghetti sauce you will ever have. This sauce has been in the works for about 10 years, and is nearly perfect for spaghetti. Meat can be added, and works wonderful with meatballs. The wonderful thing is it is not runny if prepared correctly. Also did I forget to mention it is a slow-cooker so make in the morning, come home from work make some pasta and the great sauce is already ready. Enjoy

Steps:
- Rough chop onion, celery, and bell pepper. Add to food processor or bar blender and puree.
- Add Puree to 12 in cast iron skillet, heat over med/high heat until all the liquid is removed. 15-25 minutes. Do not burn, try to adjust the temperature so burning does not occur. (it should look dry and pulpy).
- If you have not already, turn heat to med and add the garlic, cook for 1 minute.
- Add the tomato and anchovy paste and cook for an additional 1-2 minutes. Mix well with the vegetables.
- Add white wine and reduce until almost dry.
- Add paste/vegetable mix to slow cooker. Add the canned tomatoes, Italian seasoning, salt, pepper and red pepper flake. Stir well.
- Cover slow cooker and cook on low for 6-8 hours or 3-4 hours on high.
- Season for taste, it may require a little more salt and pepper.
- Serve over cooked pasta, and sprinkle with Parmesan cheese.
