Steps:

  • In a large bowl, beat the sugar, buttermilk, eggs, oil and coffee until well blended. In a small bowl, combine the flour, 3/4 cup cocoa, baking powder, salt and baking soda; gradually beat into sugar mixture until blended. Stir in two-thirds of the bacon., Fill paper-lined muffin cups two-thirds full. Bake at 375° for 18-22 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely., Frost cupcakes. Sprinkle with remaining bacon; dust with remaining cocoa. Refrigerate leftovers.

Steps:

  • 1. Preheat oven to 350 degrees Grease 3 - 9 inch round cake pans. Place bacon in a large, deep skillet. Cook over medium-high heat until brown. Drain, crumble and set aside. (I place bacon on a baking sheet and bake for 20-30 minutes,at 350, or until brown and crispy)
  • 2. In medium bowl, pour hot coffee over cocoa, and whisk until smooth.
  • 3. Add buttermilk and whisk until combined, set aside to cool.
  • 4. Sift together the flour, baking soda, baking powder and salt, set aside.
  • 5. In a large bowl, cream butter and sugar together until light and fluffy.
  • 6. Beat in the eggs one at time, then mix in the vanilla.
  • 7. Add the flour mixture alternately with the cocoa mixture to the sugar/butter mixture.
  • 8. Mix in 3/4 of the bacon, reserving the rest for garnish.
  • 9. Spread the batter evenly between the 3 prepared pans and bake in preheated oven for 25 to 30 minutes.
  • 10. Cool for 10 minutes on wire racks then remove the cakes from the pans and cool completely on the wire racks.
  • 11. FROSTING: Place the butter, granulated sugar, and heavy cream in a medium saucepan and heat over medium heat until the butter melts and the sugar dissolves, stirring occasionally.
  • 12. Increase the heat to medium-high and simmer the mixture for 1 minute, stirring constantly. Small bubbles will form around the edge of the pan.
  • 13. Remove the saucepan from the heat. Add the chopped dark chocolate and dark cocoa powder. Stir the mixture until it is smooth and all of the chocolate is melted.
  • 14. Return the saucepan to low heat for 1 minute, if necessary, to melt the chocolate completely.
  • 15. Pour the chocolate mixture into the large bowl of an electric mixer. Add the powdered sugar, vanilla, and dissolved coffee and mix on low speed just to blend in the powdered sugar.
  • 16. Press plastic wrap onto the surface of the mixture and refrigerate until it is cool to the touch, about 35 minutes. Stir occasionally to ensure the mixture cools throughout.
  • 17. Beat the cooled chocolate mixture on medium-high for 1 minute, or until the frosting is creamy and lightens slightly in color.
  • 18. Place on layer of your cooled cake onto a serving platter and cover the sides and top with the frosting. Place a layer on top of this and repeat with the frosting. Place the top layer on and repeat. Now spread remaining frosting over the sides to remove any splits on the layers. Spread the rest over the top layer and sprinkle remaining bacon over the top and dust with more cocoa powder if desired.

Fried Eggs and Bacon Cake image

Steps:

  • For the cakes: Preheat the oven to 350 degrees F. Liberally spray an 8-ounce coffee mug and 12-inch cast-iron skillet with nonstick cooking spray.
  • Prepare the cake mix in a large bowl according to the package instructions, then add the instant coffee or espresso.
  • Fill the prepared coffee mug halfway with the cake batter. Pour the remaining batter into the prepared skillet. Place in the oven and bake until a skewer or toothpick inserted in the center comes out clean, 20 to 25 minutes for the mug cake and 25 to 30 minutes for the skillet cake. Let cool completely.
  • Remove the mug cake from the mug. Slice off the crowned top. Place the cake back into the mug cut-side down so that the flat bottom is now on the top. If the top of the skillet cake is crowned or domed, slice off the domed part to make a flat and even top.
  • For the mug cake icing and garnish: In a small bowl whisk together the caramel sauce and cream. Pour on top of the mug cake in the mug to give it a coffee-with-cream-like appearance.
  • Line a sheet tray with parchment paper. Transfer the melted white chocolate to a small disposable piping bag. Cut off the tip to create an 1/8-inch opening. Pipe the white chocolate onto the lined sheet tray in three squiggly lines that are joined at the bottom to resemble steam. Repeat with the remaining white chocolate. (You will have extra "steam" garnish in case one breaks.) Place in the refrigerator until firm, about 30 minutes. Use to garnish the coffee mug cake.
  • For the skillet cake icing: Add the cream to a medium pot. Place over medium-low heat and bring to a simmer, then remove from the heat. Add the chopped chocolate, butter and corn syrup. Let sit for 2 minutes, then whisk to blend everything together. Add the finely ground chocolate wafers to the chocolate mixture and stir until completely combined. Pour over the skillet cake and smooth with a spatula until it is a nice even layer. Place in the refrigerator to let the icing set for about 30 minutes.
  • For the eggs: Line a sheet tray with plastic wrap or parchment paper and spray with cooking spray. Place in the freezer for 30 minutes.
  • In a small bowl, combine the gelatin and 1 tablespoon water and mix to combine to bloom the gelatin.
  • In a small pot, combine the cream, milk, granulated sugar and salt. Place over medium-low heat and bring to a simmer, stirring to help the sugar dissolve. Remove from the heat and whisk in the bloomed gelatin, stirring until dissolved. Transfer to a measuring cup. Let sit, stirring occasionally, until the mixture cools and starts to thicken. (You can place the measuring cup in a bowl of cold water to help it thicken quickly; you want it to be the consistency of thick pancake batter.) If the mixture gets too thick, place it in a bowl of warm water or microwave it for about 5 seconds.
  • Remove the chilled sheet tray from the freezer. Pour about 1/4 cup of the cream mixture into the prepared frozen sheet tray in an irregular circle to make an "egg white," making sure to leave room to make three more egg whites. Place one of the canned apricot halves "egg yolks" cut-side down into the center of an egg white. Repeat with the remaining cream mixture and apricot halves. Place in the refrigerator and chill until the whites are set, 30 minutes to 1 hour.
  • To assemble: On one side of the skillet cake, place two "eggs" on top. Place three strips of candied bacon on the other side of the skillet cake. Serve the extra eggs and candied bacon on a plate on the side and with the coffee mug cake garnished with white chocolate steam.
  • Preheat the oven to 350 degrees F.
  • Place the brown sugar in a plate or sheet pan. Line a baking sheet with a wire rack and spray with cooking spray.
  • Gently press the bacon into the brown sugar until mostly coated. Arrange the bacon on the rack. Bake, rotating the pan halfway through baking, until the bacon is super crisp and golden, 30 to 50 minutes, depending on the thickness. Let cool on the rack.

Whiskey-Soaked Dark Chocolate Bundt Cake image

Steps:

  • Grease and flour a 10-cup-capacity Bundt pan (or two 8- or 9-inch loaf pans). Preheat oven to 325 degrees. In microwave oven or double boiler over simmering water, melt chocolate. Let cool.
  • Put espresso and cocoa powders in a 2-cup (or larger) glass measuring cup. Add enough boiling water to come up to the 1 cup measuring line. Mix until powders dissolve. Add whiskey and salt; let cool.
  • Using an electric mixer, beat 1 cup butter until fluffy. Add sugar and beat until well combined. Beat in the eggs, one at a time, beating well between each addition. Beat in the vanilla extract, baking soda and melted chocolate, scraping down sides of bowl with a rubber spatula.
  • On low speed, beat in a third of the whiskey mixture. When liquid is absorbed, beat in 1 cup flour. Repeat additions, ending with whiskey mixture. Scrape batter into prepared pan and smooth top. Bake until a cake tester inserted into center of cake comes out clean, about 1 hour 10 minutes for Bundt pan (loaf pans will take less time, start checking them after 55 minutes).
  • Transfer cake to a rack. Unmold after 15 minutes and sprinkle warm cake with more whiskey. Let cool before serving, garnished with confectioners' sugar if you like.

Deep, Dark Chocolate Cake image

Steps:

  • Arrange a shelf in the lower third of the oven, place a baking stone on it, and preheat the oven to 350°F/177°C.
  • Spray VERY GENEROUSLY a 13 x 9 x 2-inch (33 x 23 x 5-cm) rectangular pan or two 9 x 2-inch (23 x 5-cm) round cake pans with nonstick cooking spray. Line the bottom of the round pans with parchment and spray on top of the parchment. With the rectangular pan, line and extend up the long sides with a piece of Release foil or parchment sprayed lightly with nonstick cooking spray.
  • In a heavy saucepan, stir together the sugar, salt, cocoa, and baking soda. In another saucepan, bring 1 cup (237 ml) water to a boil. Stirring constantly, pour boiling water a little at a time into the cocoa mixture. It will bubble up at first and then get dark and thicken. Stir the cocoa mixture briskly. Place on the heat and bring back to a boil. Turn off the heat and allow to stand in the hot saucepan for at least 10 minutes.
  • Pour the hot cocoa mixture into a mixing bowl. Add the oil and vanilla and beat on low speed for about 10 seconds. On low speed, beat the flour into the batter and then, with a minimum of beating, beat in the egg yolks, whole eggs, and buttermilk. This is a thin batter. Pour the batter into the prepared pan or pans. Place in the oven on the stone and bake until the center feels springy to the touch, about 25 minutes for round layers or 35 minutes for the sheet cake. Allow to cool in the pan for about 10 minutes on a rack. Run a thin knife around the edge and jar the edge of the pan to loosen. Invert onto the serving platter. Cool completely before icing.

Portion about 2 cups of the buttercream into a separate bowl and mix in the other 2/3 of the chopped candied bacon.Level out the tops of each cake, and then cut each layer in half horizontally so there are 4 even layers. Place one bottom half cake layer on a serving platter or cake stand. Portion 1/3 of the bacon chocolate buttercream onto the layer and spread evenly out to the edges. Add a layer of cake, 1/3 of the bacon buttercream, and spread the frosting. Repeat once more. Place the last cake layer on top, bottom side up to give the cake a nice clean edge on top.Place 1/3 of the remaining chocolate buttercream in a piping bag fitted with a star tip.
