WINNING CRANBERRY DATE BARS

I enjoy making these when the cranberry season arrives. The recipe is very easy to put together, which is perfect for busy parents like me. -Richard Grams, LaCrosse, Wisconsin

Steps:

  • Preheat oven to 350°. In a large saucepan, combine cranberries and dates. Cover and cook over low heat until berries pop, 15 minutes, stirring often. Remove from the heat and stir in vanilla; set aside., In a large bowl, combine the flour, oats, brown sugar, baking soda and salt. Stir in butter until crumbly. Press half into an ungreased 13-in. x 9-in. baking pan. Bake 8 minutes. Spoon cranberry mixture over the crust; spread gently. Sprinkle with remaining crumb mixture; pat down gently., Bake until golden brown, 20-25 minutes. Cool on a wire rack. Combine glaze ingredients; drizzle over bars.

This is a Paste to serve with Cheeses much like Quince paste. It has a lovely caramel finish and a slight citrus tang. Great with Sheep or Goats milk Buchette or Chevres.

Steps:

  • Chop dates and dried cranberries finely.
  • Place the chopped ingredients in a small saucepan on a medium heat and add the lemon juice.
  • As the mixture warms up the dates will begin to break down. If the mixture becomes dry add water as necessary.
  • Cook for 20 minutes and keep an eye on the water levels. The finished mixture should be reasonably think should have a shine to it. Note that when it cools it will have a thicker consistency.
  • Place mixture in a small ramekin and allow to cool. Can be stored in the fridge for up to a week.
  • Optionally you can place the mixture in a food processor and blend until smooth.

Steps:

  • Preheat oven to 375 degrees F.
  • Cream butter and cream cheese together. Blend in the flour and the salt, to taste. Chill for several hours until firm enough to roll out. Roll mixture to 1/4-inch thick on a cutting board generously sprinkled with confectioners' sugar. Cut dough into 1 by 3-inch pieces with a pastry wheel. Put dates and/or cranberries on the bottom of each strip and roll up. Place fold side down on a sheet tray.
  • Place in oven and bake for 15 to 20 minutes until golden brown. Sprinkle with confectioner's sugar to serve.

Raw Cranberry Date Relish With Ginger image

Steps:

  • Using a large, sharp knife, dice the dates and crystallized ginger into small, uniform dice. Thinly slice the scallions and then mince them finely.
  • Put the cranberries in the bowl of a food processor and pulse a few times until they are in rough pieces. Add the honey, lime juice, jalapeño, cilantro, fresh ginger, salt, and pepper and continue to pulse until finely diced. Add the dates, crystalized ginger, and scallions and pulse once or twice to combine.
  • Refrigerate overnight to allow the flavors to blend thoroughly. Serve at room temperature.
