FRESH-HERB TISANE

Tisanes are herbal infusions made by steeping fresh herbs in boiling water, a process similar to brewing hot tea. Our version is a fragrant, soothing finish to a fine meal. Be sure to buy only pesticide-free herbs.

Steps:

  • Bring 4 cups water to a boil. Place herbs in a warmed teapot; cover with the boiling water. Let steep 5 minutes, then strain liquid into serving cups.

1 sprig lemon balm
4 sprigs fresh mint
1 sweet geranium leaf (optional)
1 sprig rosemary, thyme, or lavender

Steps:

  • Take the herbs and place in pot with other ingredients.
  • Pour boiling water over and steep for 5 minutes. Drink up.
  • The herbs may include such things as mint, rosemary, tarragon, lemon balm, sage, lavender flowers.
  • Notes.
  • The Zest should read grated Citrus Rind but the computer doesn't like the rind part.
  • Use either the cinnamon stick, lemongrass, cardamon pod or star anise. There was no neat way to do that so I included that instruction here.

2 cups boiling water

  • Herbal chai tea. Nothing beats a cup of warm chai – in any season. While the real chai is made with strong black tea, herbal chai has no caffeine at all.
  • Cinnamon and apple. Cinnamon and apple tea is true classic in the world of herbal fruit teas. You can make them from cinnamon stick and cinnamon powder, and with fresh and dried apple pieces.
