Steps:
- Boil water, put eggs in for 17 minutes.
- Remove from heat and run eggs under cold water.
- Gently remove the shell and slice each egg in half.
- Scoop out yolks, put in bowl.
- Mash with a fork and add all ingredients, except the Paprika.
- Spoon fill each egg and sprinkle with Paprika.
- Serve immediately or refrigerate.
- Enjoy!

CLASSIC DEVILED EGGS

Steps:
- Place eggs in a single layer in a saucepan and cover with enough water that there's 1 1/2 inches of water above the eggs. Heat on high until water begins to boil, then cover, turn the heat to low, and cook for 1 minute. Remove from heat and leave covered for 14 minutes, then rinse under cold water continuously for 1 minute.
- Crack egg shells and carefully peel under cool running water. Gently dry with paper towels. Slice the eggs in half lengthwise, removing yolks to a medium bowl, and placing the whites on a serving platter. Mash the yolks into a fine crumble using a fork. Add mayonnaise, vinegar, mustard, salt, and pepper, and mix well.
- Evenly disperse heaping teaspoons of the yolk mixture into the egg whites. Sprinkle with paprika and serve.

- For the BBQ Sauce: In a pot set over medium-high heat, melt the butter. Add the onions and cook to sweat. Add the chipotles, chili powder and garlic powder, and saute for 2 minutes. Add the ketchup, molasses, mustard, Worcestershire and vinegar, and bring the sauce to a simmer. Cook the sauce at a simmer for 30 minutes.
- Puree the sauce in a blender and add the salt and pepper.
- For the mayo: Combine the egg, egg yolk, lemon juice, Sriracha, garlic and mustard in a container and puree with a stick blender. With the blender running, slowly add the oil to the mixture to emulsify the mayonnaise and add the salt and pepper.
- For the coleslaw: In a bowl combine the cabbage, carrots and scallions. In a separate bowl whisk together the mayonnaise, mustard, honey and vinegar. Combine the dressing with the cabbage mixture, and mix well. Allow the slaw to sit for 30 minutes to let the flavors meld.
- For the eggs: Preheat the oil in a deep fryer to 350 to 375 degrees F.
- In a food processor, combine the pulled pork, egg yolks and 1 cup of the prepared BBQ sauce. Pulse the mixture until combined.
- Divide the mixture into 6 portions. Dip your hands in water and pat out one of the portions flat. Place a poached egg in the center and wrap the pulled pork around the egg. Repeat for the remaining eggs.
- For the breading: Whisk together the eggs and milk. Coat the wrapped eggs in egg wash then dip in the breadcrumbs. Repeat the process, dip each wrapped egg in the egg wash and then the breadcrumbs again.
- Deep-fry the eggs until golden brown, 3 to 4 minutes.
- To plate, place 2 tablespoons of the BBQ sauce on one side of the plate, and with the tip of the spoon quickly drag the center of the sauce to the other side of the plate.
- Place a 1/2 cup of the coleslaw in the middle of the plate, creating a nest in the center of the slaw. Place a fried egg in the coleslaw nest. Drizzle the Sriracha mayo over the top of the Dino Egg. Repeat for the remaining eggs and plates. Garnish with some scallions.

- Boil the eggs.Bring water to a boil and add the eggs.Cook for 12 minutes( water should cover eggs)
- Place the eggs in ice bath or simply cold water and let chill 5 minutes.
- Peel the eggs and slice lengthwise. Scoop yolks in separate bowl and place the eggs whites on extra plate.
- Add all the other ingredients (except paprika powder) to the yolks and mix until creamy.
- Scoop mixture into the egg whites and sprinkle with paprika powder and enjoy ! - to make it look extra nice you can use a pastry bag to fill the eggs.

- Mix whole grain mustard, Greek yogurt, garlic powder, and cayenne pepper in a small bowl until well blended.
- Place 2 beaten eggs into a shallow dish; place potato flakes in a separate shallow dish.
- Divide corned beef hash into 4 portions. Form corned beef hash around each egg until the egg is completely encased.
- Roll encased eggs into the beaten egg and coat with mashed potato flakes until covered.
- Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
- Drop 2 eggs into the hot oil and fry until brown, 3 to 5 minutes. Remove with a slotted spoon and place on a paper towel-lined plate. Repeat with remaining 2 eggs.
- Cut the lengthwise and serve with mustard sauce.

- Put 6 eggs in a pot; cover with cold water. Bring to a simmer, then remove from the heat, cover and let sit 10 minutes. Drain, cool and peel. Halve lengthwise and scoop out the yolks; mash with salt, pepper, 1/4 teaspoon mustard powder, 1 tablespoon milk, 1 tablespoon each chopped parsley, chives, tarragon and 1/4 cup mayonnaise. Pipe into the egg whites. Top with paprika and chives.

- Place eggs in a large wide saucepan and cover with cold water. Bring to a boil for 12 minutes. Remove eggs and and cool in refrigerator. Remove shells from eggs and slice in half lengthwise. Separate egg yolks and place into a bowl. Place whites on a separate plate. Add mayo, mustard, relish and salt and pepper, to taste, to yolks and mash together with a fork until creamy and smooth. Using a large star tip and resealable plastic bag, pipe the yolk mixture back into each egg, enough to fill yolk holes completely. Dust tops with paprika. Refrigerate. Serve cold.

- Put the eggs in a large saucepan with enough water to cover by 2 inches.
- Add some salt.
- Bring to a boil over high heat.
- As soon as it boils, take the pan off the heat, cover, and let stand for 10 minutes.
- Pour off the hot water, fill the pan with cold water, and let stand about 10 more minutes.
- Gently crack the shells under water to loosen, then remove the shells.
- Halve the eggs and scoop out the yolks.
- Mash the yolks well, then add the remaining ingredients except the chervil or chives.
- Mix well.
- Taste, adjust the seasonings.
- Fill the egg halves withe the filling.
- Can be prepared about 4 hours before serving.
- Sprinkle with the chervil or chives just prior to serving.

- Peel shells off cooled hard-boiled eggs; slice into halves lengthwise.
- Remove yolks from whites and place in a small round bowl.
- Mash yolks with a fork into fine pieces.
- Add 2 heaping tablespoons Mayonnaise, yellow mustard, diced gherkins and finely chopped jalapeno (seeds removed), and salt and black pepper to taste.
- Stir mixture until creamy.
- Spoon mixture into a zip-lock sandwich bag; seal bag and snip off one corner of the bag.
- Squeeze mixture out of corner of bag into egg white halves.
- Sprinkle tops of filled deviled eggs with paprika.

JALAPENO DINOSAUR EGGS
This my adaption of Scotch Eggs, a classic appetizer. I dearly love the eggs but I can cut the cholesterol by at least half by substituting stuffed hot peppers instead. Try this one and I know you'll be pleased if you are a lover of chili peppers. Of course, if you are a true chili head, you can use habaneros, or other really hot peppers, which is what I do.

- divide sausage into 12 equal portions and shape into thin patties.
- mix cornmeal or bread crumbs with pepper, salt and cayenne pepper.
- slice jalapenos in half and remove most of the seeds and membranes.
- slice cheese into sticks that will fit in the jalapenos used.
- slice ham into strips that will wrap around cheese.
- place wrapped cheese into jalapeno cavity and reassemble halves.
- form sausage patties around stuffed jalapenos, covering completely.
- roll covered peppers in flour;.
- then egg wash;.
- then finish with seasoned crumb or cornmeal mixture.
- allow to dry on a platter for about 5 minutes.
- put oil in a large pot to a depth of about 1 1/2 inches.
- heat to 325 degrees.
- with a slotted spoon, lower covered peppers into hot oil.
- cooking a maximum of 4 peppers, brown until well browned.
- when browned, check with a chef's/digital thermometer (about 7-8 minutes).
- insert to a depth of about 1/4 inch, looking for a temperature of 175 degrees.
- allow to cool on absorbent towels, then slice across into 3/4 inch slices.
- arrange on serving platter or keep warm if serving later.
- serve with ranch or other favorite dipping sauce.
