DIY HOT COCOA MIX

Because we live in Idaho and have long, cold winters, hot chocolate is a staple for our family. With this make-ahead mix, a warm cup can be ready in the time it takes to pull off the mittens. -Tracy Dalin, Gooding, Idaho

DIY Hot Cocoa Mix image

Steps:

  • In a large airtight container, mix the first 5 ingredients. If desired, stir in marshmallows and chocolate chips. Store in a cool, dry place up to 6 months., To prepare hot cocoa: Place 1/3 cup mix in a mug. Stir in hot milk until blended.

Steps:

  • In a large mixing bowl, combine milk powder, confectioner's sugar, cocoa powder, and creamer. Stir till thoroughly combined. Store cocoa mixture in an airtight container. Makes about 15 cups mix, or enough for about 45 servings.
  • For 1 serving, place 1/3 cup cocoa mixture in a coffee cup or mug, and add 3/4 cup boiling water. Stir to dissolve. Top with dollop of whipped cream or a few marshmallows, if desired.

Steps:

  • Bring 4 cups whole or low-fat milk to a simmer in a saucepan over medium heat. Mix 3/4 cup sugar, 1/2 cup unsweetened cocoa powder and 3 to 4 ounces finely chopped bittersweet chocolate in a bowl, then whisk into the milk. Reduce the heat to low and simmer, stirring, until the chocolate melts and the cocoa is thick, about 2 minutes. Divide among 4 mugs and garnish each with homemade marshmallows (see below) or whipped cream.

I never have understood why most hot cocoa mixes call for store-bought chocolate drink mix as an ingredient. That just doesn't make sense to me. This verson is easier, cheaper, and in my opinion tastes better. Prep time does not include blending. The cook time is the time it takes to heat the water and stir in the cocoa. I have no idea on the serving size, so I gave it a wild guess.
