EASY ENCHILADA CASSEROLE WITH DORITOS
I saw this recipe on Good Morning America and it sounded so easy and tasty. And it was! The first time I made it my husband ate almost 1/3 of it in one sitting. Even my toddler son enjoys it. This would be great for those informal group get-togethers also. Add some chiles to give it a bit more zip or a pound of browned ground beef or some chicken for another twist.

Steps:
- Preheat oven to 375 degrees F.
- Crumble 2/3 of bag of Doritos into mixing bowl.
- Mix in the onion, chili, 1 1/2 C cheese, enchilada sauce and tomato sauce.
- Place into an 8 1/2 x 11-inch casserole dish.
- Bake for 20 minutes.
- Remove from oven and spread on sour cream, remaining Doritos and 1/2 C cheese.
- Bake for 5 minutes or until cheese is melted.
- Serve.

Steps:
- 1. Brown ground beef. Drain grease. Add picante sauce and taco seasoning and heat through.
- 2. Layer a 9x13 baking dish with Doritos. Evenly spread ground beef mixture over Doritos. In bowl, combine enchilada sauce and cream of mushroom soup; pour soup mixture over ground beef. Top with additional layer of Doritos. Finally, top with cheese.
- 3. Bake at 375 for 20-30 minutes until heated through and cheese is slightly browned.
DORITOS ENCHILADA CASSEROLE
Steps:
- Preheat oven to 375 degrees F. Crumble 6 cups Doritos with your hands into a large mixing bowl. Add the rest of the casserole ingredients to the Doritos. Stir with rubber spatula.
- Place into an 8 1/2x11-inch oven proof dish. Bake for 20 minutes.
- Remove from oven. Spread the sour cream over the top with a large spoon of spatula. Top with remaining 2 cups Doritos. Then sprinkle with the 1/2 cup of cheddar cheese. Bake for another five minutes and serve.

Steps:
- Mix first four ingredients and heat in a saucepan.
- Spray a 9X9 baking dish.
- Place a layer of Doritos in the bottom.
- Pour 1/2 of heated mixture on top, sprinkle with 1/2 of the grated cheese.
- Repeat.
- Heat in 350 degree oven about 20-30 minutes until hot and bubbly.
- Can be doubled and use a 9X13 pan.
- You won't need to use all the Doritos, but that way you can munch while you cook.

You can use any flavor Doritos® to suit your tastes. When reheating leftover casserole, stir in a little bit of milk to make it creamy again.

- Preheat oven to 350 degrees F (175 degrees C).
- Cook and stir ground beef in a large pot over medium-high heat until the beef is crumbly and completely browned, 7 to 10 minutes. Drain and discard excess grease.
- Stir cream of chicken soup, enchilada sauce, and milk with the ground beef; bring to a simmer and cook for 5 minutes.
- Spread crushed tortilla snack chips into a 9x13-inch baking dish. Pour ground beef mixture over crushed chips; stir. Arrange cheese slices atop the mixture.
- Bake in preheated oven until the cheese melts, about 5 minutes; stir the melted cheese into the beef mixture.

- In a large bowl, stir together the chicken, cream of chicken soup, sour cream, green chiles, chopped green onions, and milk if using until combined (reserve some of the green onions for sprinkling on top of the casserole).
- Spray a 9x9 or 11x7 casserole dish with nonstick spray. Gently crush the Doritos into smaller pieces, and spread half of them in the casserole dish. Spoon half of the chicken mixture over the Doritos, and the top with half of the cheese. Repeat the layers with the remaining Doritos, chicken mixture, and cheese.
