This is my favourite muffin recipe of all! I eat these muffins all the time and they are quick and easy to make.

Double Choc-Chip Muffins image

Steps:

  • Preheat oven to 200 C and prepare muffin pan by greasing or fill with paper liners.
  • In large bowl mix the eggs, oil, milk and vanilla.
  • In smaller bowl mix the flour, sugar, cocoa, baking powder, salt and chocolate chips.
  • Combine wet and dry mixtures and fold together gently until just mixed.
  • Spoon into prepared pan and sprinkle choc chips of top of each. Bake at 200C for 20 minutes.
  • Remove from pan and cool on rack. These are nice sprinkled with extra chocolate chips on top of each muffin before baking.

Steps:

  • Mix cake mix, pudding, water, eggs, oil, and almond extract until smooth.
  • Stir in chocolate chips last, blend through.
  • Fill muffin cups 3/4 full and bake in preheated oven at 350 degrees between 25-35 minutes until done, but do not over cook.
  • This will depend on the size of the muffin cups used.
  • This recipe will make 1 jumbo pan (6) and 1 regular size (6) or 12 to 18 regular size muffins.

Steps:

  • Preheat the oven to 350 degrees F.
  • Line the muffin tin with paper liners and lightly coat with cooking spray. (This may seem like overkill, but otherwise the muffins will stick.)
  • Whisk the flour, cocoa, baking powder, baking soda and salt in a medium bowl. In another medium bowl, lightly whisk the eggs, then whisk in the butter, brown sugar, milk, oil and vanilla.
  • Quickly fold the wet ingredients into the dry with a rubber spatula. Just before the batter comes together, fold in the chocolate chips¿don¿t mix the batter too much or the muffins will be tough. Divide the batter among the muffin cups (1/4 cup of batter per muffin). Bake until a tester inserted in the center comes out clean, about 25 minutes. Turn the muffins out of the tins, cool on a rack. Serve slightly warm with jam.

  • Preheat the oven to 400 degrees F.
  • Put the flour, baking powder, baking soda, cocoa, sugar, and 3/4 cup of the chocolate chips into a large bowl. Pour all the liquid ingredients into a measuring jug.
