Steps:

  • In a large skillet over medium heat, saute garlic in oil until tender, 2 minutes. Stir in basil and crushed tomatoes. Season with salt and pepper and cook 15 to 20 minutes, until slightly thickened. Serve immediately.

CANNING PIZZA OR SPAGHETTI SAUCE FROM FRESH TOMATOES

This can be used for either pizza sauce or spaghetti sauce. It can be canned or frozen. Store canned tomato sauce in a cool, dark area.

Canning Pizza or Spaghetti Sauce from Fresh Tomatoes image

Steps:

  • Fill a large pot with water; bring to a boil. Fill a bowl with ice water. Place tomatoes into the boiling water, working in batches, 30 to 45 seconds. Remove from the boiling water; plunge into ice water. Peel off tomato skins; cut in half. Remove the seeds using your finger or a spoon. Place in a colander to drain.
  • Heat olive oil in a skillet over medium heat; place onion into the skillet. Cook and stir until the onions become translucent, about 5 minutes.
  • Combine tomatoes, onion, lemon juice, red wine, garlic, celery, basil, red sweet pepper, salt, bay leaves, and ground black pepper in a large pot over medium heat; cook and stir over until tomatoes break down and sauce thickens, about 10 minutes.
  • Sterilize 8 pint-size jars and lids in boiling water for at least 5 minutes. Pack tomato sauce into hot, sterilized jars, filling to within 1/4 inch of the top. Top with clean lids and screw on rings.
  • Fill water bath canner with water according to manufacturer's instructions. Bring to a boil and lower jars into the boiling water using a holder. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Process for 35 minutes for pints.
  • Remove the jars from the water bath canner and place onto a cloth-covered or wood surface, several inches apart, until cool, 8 hours to overnight. Press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

Chunky Tomato Sauce for Basic Pizza image

Steps:

  • In medium saucepan, heat oil over medium. Cook onion and garlic until translucent, stirring, 3 minutes.
  • Add whole, peeled tomatoes (lightly crushed with hands), crushed tomatoes, oregano, and a pinch of sugar (optional).
  • Simmer, stirring until thickened, 10 to 20 minutes. Season with salt and pepper. Freeze any leftover sauce for up to 3 months.

  • Wash and carefully clean tomatoes (I fill a clean, sterilized sink with water and let the tomatoes sit there while I chop). Chop tomatoes into chunks, taking care to remove both core and blossom ends, all soft or black spots, and any bruised areas. Keep chopped tomatoes in large bowls.
  • In a heavy-bottomed pot (or several pots, depending on the amount of tomatoes and the size of your pots), saute onion on low-medium heat for 15 mins until it starts to turn golden. Add garlic and saute for another 5. Increase heat to medium-high and add tomatoes in batches, letting each batch let water and reduce for about 5 minutes before adding the next one (this way, more of the tomatoes' surface area is exposed, and the sauce reduces more quickly). When all the tomatoes have been added and the mixture is boiling, reduce heat to medium and simmer until sauce reduces by half (about 30-60 mins, depending on the amount of tomatoes and the size of your pot, or pots).
  • Meanwhile, once all of the tomatoes are in the pot, prepare your clean jars and boiling water canner. Heat jars in simmering water until ready for use, at least 10 minutes at an active simmer. Set bands aside.
