SIMPLE BAKED APPLES
This is a family standard. We have it at least once a week during the winter. The spices, nuts and raisins can be interchanged or omitted depending upon your tastes. This also serves as a great breakfast, side dish, or dessert.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart casserole dish, or coat with non-stick cooking spray.
- Place apples in a large bowl. In a small bowl, mix together sugar, flour, cinnamon, nutmeg and cloves. Stir spice mixture into apples until evenly distributed. Fold in raisins and walnuts. Spoon into prepared dish. Pour milk evenly over apple mixture.
- Bake in preheated oven for 45 to 60 minutes, or until soft and bubbly. Allow to cool slightly before serving.

APPLE CRISP - PERFECT AND EASY
I adapted this from a 50-year-old peach crisp recipe. Although it works well with peaches, it works even better with fresh, crisp cooking apples.

Steps:
- Preheat oven to 375 degrees F (190 degrees C). Lightly grease an 8-inch square baking dish.
- Arrange apple slices evenly in prepared baking dish. Sift flour, sugar, cinnamon, and salt in a bowl. Cut in butter using a pastry blender or 2 knives until mixture resembles coarse cornmeal; sprinkle over apples.
- Bake in preheated oven until topping is golden, 40 to 45 minutes. Cool slightly before serving.

Steps:
- Spray an 8x8 pan with cooking spray, then place the sliced apples in the pan.
- Mix the sugar, 2 teaspoons flour and cinnamon together, sprinkle over apples.
- Pour the water over the apple mixture.
- Combine the oats, remaining flour, brown sugar, baking powder and baking soda together.
- Stir in the melted butter and crumble over the apples.
- Bake at 350 for 40-45 minute
- Serve warm with icecream or caramel sauce.

- Heat oven to 180C/160C fan/gas 4. Pour the custard into a large baking dish. Toss the apples in the orange zest and juice, cinnamon and sugar.
- Arrange the apples, cut-side up, on top of the custard and drizzle with any extra juice from the bowl. Sprinkle over the granola and bake for 30 mins, until the apples are soft and piping hot - cover after 20 mins if the granola is getting dark. Serve with a drizzle of cream or a scoop of ice cream, if you like.

EASY CRUNCHY BAKED APPLES
This recipe shows how one of my other recipes - for Hot Water Pastry - can be used in a 'sweet' context.

Steps:
- Preheat your oven to 180°C.
- Follow the directions of my 'Hot Water Pastry' recipe, incorporating 2 tablespoons of sugar into the ingredients.
- Divide the pastry into two balls. Roll out each ball into a circular shape, and place on two small or one large lightly oiled baking tray(s).
- Peel the apples and use an apple corer to remove the cores.
- Place each apple in the center of each circle of pastry.
- Push a date down to the bottom of the hole in each apple.
- Put a tablespoon of sultanas in each apple hole.
- Put a tablespoon of honey in each apple hole.
- Push a date into the top of each apple hole.
- Sprinkle a teaspoon of mixed spice over each apple, followed by a tablespoon of raw sugar each.
- Pull the pastry over the sides of each apple, patting the pastry together until the entire apple is covered, completely sealed with no gaps.
- Bake in your 180C oven for 35-45 minutes, or until pastry is golden brown, and when a skewer penetrates into the apple without resistance.
- Serve immediately with vanilla ice cream, double cream, or sour cream.

- Using a handheld or stand mixer with a paddle attachment, or simply using a fork or spoon, beat/mash the butter, sugar, cinnamon, and nutmeg together until combined. Stir in the oats, then the raisins/dried cranberries/nuts, if using. Set aside.
- This can be tricky, but I recommend using a sharp paring knife and a spoon. (Or an apple corer.) I find cookie scoops can easily break or crack the apples. Using a sharp paring knife, cut around the core, about halfway or 3/4 down into the apple. Use a spoon to carefully dig out the core. Takes a bit of patience and arm muscle. Once the core is out, use a spoon to dig out any more seeds.
- Place cored apples in an 8-inch or 9-inch baking pan, cake pan, or pie dish. Spoon filling into each apple, filling all the way to the top. Pour warm water into the pan around the apples. The water helps prevent the apples from drying out and burning.
