EASY LIMA BEANS
If you are looking for a way to fix lima beans besides boiling them in water try this recipe. I don't think you'll be sorry you tried them. :) If you want to have more of a buttery flavor, remove the beans from the liquid and place into a bowl then add the final 2 Tablespoons of butter and then salt and pepper to taste. I saw the basic recipe on allrecipes.com which was posted to that site by SharonB13.The name is the same as her's, but I changed a few things to the recipe and decided to post it under my own name.Submitted to Food.com ( A.K.A. Check for seasoning and adjust with salt, pepper, olive oil, if necessary. Serve hot.

SWEET FRESH LIMA BEANS
Steps:
- Bring about 3 1/2 cups water to a boil in a small saucepan.
- Heat a medium stockpot over medium-low heat and add the oil. Saute the onions in the oil, gradually adding 1 cup of the boiling water and stirring frequently, until the onions are soft and golden brown, 15 to 20 minutes. Add the lima beans and cook until beginning to soften, 10 minutes more. Add the sugar, some salt and red pepper flakes and the remaining boiling water. Partially cover the pan and cook until the lima beans are tender, about 40 minutes. Use the back of a wooden spoon to gently mash one-third of the tender beans and combine to make creamy. Serve warm.
REALLY DELICIOUS LIMA BEANS
Steps:
- In a skillet, heat the bacon over moderate heat. When partially rendered, add the olive oil. When the oil is hot add the onions, cover and cook for 15 minutes or until really tender. Add the garlic, tomato, tomato puree, and hot chili pepper and simmer, uncovered, for 5 minutes. Add the lima beans, cover and simmer for 15 minutes or until they have had a chance to absorb the flavors. Season to taste with salt and pepper and serve with grilled Italian sausages or breakfast sausages.
BEST LIMA BEANS YOU'LL EVER EAT!
I got this recipe yrs ago from a friend who served this dish at a dinner party & it got rave reviews. When you want to impress or convince a lima bean non-believer, this is the recipe for you. There are only a few lima bean recipes at this site compared to other veggies. This 1 is an easy to prepare stovetop-to-table dish & spectacular with any meat or chicken entree not combined with a cream sauce. Enjoy!

Steps:
- Cook frozen lima beans per pkg directions while following remaining steps & set aside.
- Roughly dice the medium onion & set aside.
- Cut each large mushroom in half from top down through any stem. Put the cut edge down on your cutting board & slice each half in approx 1/3 inch slices & set aside.
- Cut bacon slices in 1/2 inch segments & fry in a non-stick skillet until crisp. If you have more than 2 tbsp of rendered bacon fat grease, remove the excess of that amount.
- Add diced onion & sliced mushrooms to skillet & saute until onion is translucent. Do not overcook to carmelized state.
- Add 1 tsp curry powder + low-fat sour cream & combine well.
- Taste & add additional curry powder or seasoning salt to your preferences.
- Remove skillet from heat, add cooked lima beans, mix well & serve immediately.
- Note: My advice is to plan for 2nd helpings. You'll need them!

SOUTHERN LIMA BEANS WITH RICE
I was born and raised in the south, and we eat a lot of beans. Here is a easy and basic lima bean recipe. We've been doing it this way for years. You can use ham hocks, hambones, smoked bacon or smoked sausage for the pork flavor in this dish. Also fresh, frozen or even canned beans can be used--they just won't have to cook as long.

Steps:
- I know the bag says to soak the beans overnight, but you really don't have to.
- Wash the beans, and then put them in a large pot. Cover with water and bring to a boil. Boil for 3 to 5 minutes, then turn off the heat, cover and let it sit for 1 hour.
- After the beans have sat, drain the water and sit the beans to the side.
- Add the oil to the pot and sauté the ham hocks and onions together, until onion is clear and tender, add garlic and sauté about 2 minutes more. Add the beans and cover with water.
- Add pepper and salt--only about 1 teaspoon of salt at first.
- Bring to a boil; stir, reduce heat and cover and simmer for about 2 hours.
- Keep checking the water level and stirring every once in a while. Add more water if needed, but not too much.
- Just enough to keep about 1 inch of water above the beans as they cook.
- Cook until beans are tender, adding more salt if needed. The water will turn into a wonderful gravy. Serve over rice.

LEMON-GARLIC LIMA BEANS
When I was growing up on Cyprus, my mother would often make this side dish to have with roast lamb. Although I hated lima beans when I was a kid (who didn't?), I love them now. They always remind me of home. -Paris Paraskeva, San Francisco, California

INDIAN LIMA BEANS
I don't know if this recipe is actually Indian. I did not write down a title when I copied it from the book. I serve this over fragrant rice. It is my favorite meal and as a child I would not eat Lima beans because they were pasty. I hope you enjoy this as much as I do.
